We think you'll like this one. Jacques Pepin's chicken breast a la Susie recipe was inspired by a friend's recipe. Let's all give thanks to Jacques' friend Susie because this is a terrific method for keeping baked chicken succulent and moist. Mayonnaise is a polarizing ingredient, but in this instance, it's doing its job right.
Holiday hack: you can also try this recipe with skin-on turkey breast.
What you'll need:
2 chicken breasts, salt, 2 1/2 tsp chili-garlic sauce, 1/3 cup mayo, chives

You know you’re a pro when you use the measuring spoon (still attached to the ring full of other measuring spoons, no less) to mix and apply your sauces! Gotta love Jacques Pépin. He’s a culinary master who shows regular people how to cook.

The most endearing thing about Jacques is that he spreads chili sauce and mayo with the measuring spoon he’s using, just like the rest of us would do. :-)

Never ever underestimate the uses of mayonnaise, especially when baking. I've done something similar with lobster tails and it's AMAZING in its flavor. This is going to go into my rotation. Served over rice with plenty of that sauce.

I know mine will not turn out anywhere near as good as Jacques, but I’m going to give it a go this weekend and have fun doing it. I love the simplicity of Jacque’s cooking. Zero pretension and no BS. Млечната киселина прави месото по-крехко и го предпазва от изсушаване при приготвянето му. In the 60s and early 70s, the rural ladies all put a thick coat of mayo on all large cuts of neat and let it stand a while. Hams roasts etc. Nothing was ever dry.

This might be good using dijon mustard, white wine and mayo; jerk sauce lime and mayo; peanut butter, Thai chilis and mayo; Greek yogurt, herbs and mayo etc. Lots of possibilities.

When you’re cooking at home and not in a restaurant, and you are the Great Master Chef Jacques Pepin, who has been cooking for longer than a lot of us have been alive, you may do as you wish. I can’t be sure, but it looks like Sambal. It’s quite thick and a bit chunky. The flavor is typically garlicky and has a bit of tartness. It’s definitely got some heat, but it is really delicious. Depending on where in the world you live, you can probably find it in the “Asian Foods” section of your grocery store.

Jeez! Take note: That sauce was in a small bowl of sauce and all of it went onto the chicken right then! He didn’t dip that spoon into a big jar of mayo that went back into the fridge.

OMG! Cross contamination of germs using the same teaspoon touching raw chicken and then putting that contaminated teaspoon into the hotsauce jar. Throw that hotsauce out! He should know better and should not be showing people it's OK to do that

Looks delicious but tried making this and it turned into a liquidy mess. Sauce just ran off the top of the chicken and the casserole dish was just filled with an oily mess. Not sure where I went wrong??
