Another great video! Really appreciate that you go through the experimentation to find the optimal proportions. I would love to see a video on making a different type of foam - the one that is referred to as “air” and uses soy lecithin. What are optimal ways to infuse flavors into it and maximize its “airy-ness”. Thanks!!!

Thanks for this great video. Solves the issue of finding stable foam that I have yet to achieve. I have a quart size (bigger than the size you recommend) iSi whipper. If you already only owned the bigger size, would you also invest in the smaller size? Unrelated question: does the foam quality differ depending on how long it’s refrigerated? Is 30min foam better than foam refrigerated day prior to serving?

Really niiice foam! I have a super small whipper (250ml) does the n2o catrige scale as well? So one charge is enough there?

For this size, one charger is enough. You'll also have obviously to reduce the size of the batch.

@@TrufflesOnTheRocks Did an Orange Juice, Cinnamon Sirup & Chocolate bitters foam roughly with the same specs and served it over a Rum Oldfashioned with the Coffe Rum from your float in the MaiTai riff video. It was Excelent! Just that the foam was not as stable as in your video. Was gone at about 2 minutes or less. I wonder if that happened because my foam was way less sour. In Egg Whites a little bit of acid keeps the egg foam more stable.

I've tried making foams using Methylcellulose and Xanthan Gum before, and it really does work great. We've done foams using other methods at our bar, but the texture is just not up to what those two ingredients can do. I've noticed that you don't heat up a part of the foam base to dissolve the Methylcellulose, while guys like Kevin Kos state that it's necessary to do that for the MC to dissolve properly. I've also experienced clumbing with the MC if it's not heated enough. Any advice or thoughts on this?

Great video. A question: isi says one pint whipper should only have 1 charge max. What gave you the confidence to do two without damage or another issue?

i’ve made foams a few times for my drinks and i’ve found (in my research and experience) that if you don’t go past the max line you have enough air in the isi for all the gas. adding the second co2 just makes for a thicker foam. i’ve personally always used egg whites but the 2 chargers has always made a thick solid foam for me

Thanks a lot for such a great content! I've also been seraching easier way to make stable foam for coctails. However, I have one question: should it be only methyl cellulose or carboxymethyl cellulose also works well? In case you've tried this variona, pls share the opinion.

I’ll be fully honest, I don’t know what carbomethyl cellulose is.

According to Kevin Kos: CMC or carboxy methylcellulose is not a suitable option, because it has a lower water retention rate. So go for pure, food grade methylcellulose (Methocel F50)

That is a sexy foam but not very practical method for me who is drinking just one or two cocktails a week. Would it work to incorporate methyl cellulose in to Gumm syrups and shake it together with any cocktail I want?

J'adore cette idée mais nous ne sommes que deux. Ce n'est pas pratique à la maison, sauf si je mange au petit-déjeuner, que je pourrais apprécier. Pour le bar, absolutement.
