First, this was so delicious even more so after letting it "age" after a few days! I always love the convenience of a batched cocktail, especially after a long day, so thank you (and always for your content)! Second, I tried scouring your videos but could not find it, didn't you recommend a cocktail app based on what ingredients we already have? Thanks!

That is a sexy foam but not very practical method for me who is drinking just one or two cocktails a week. Would it work to incorporate methyl cellulose in to Gumm syrups and shake it together with any cocktail I want?

What coffee filter/nut bag do you use. The coffee filters I use are awful and often break.

@ lol. I’m actually a little weirded out that the red colouring gets completely filtered out. But it’s delicious in cocktails all the same, more mellow than the medicinal taste that puts some people off. Excellent video as usual, by the way!

Would the clarification process yield a similar result if you used something other than simple syrup? I’m making a twist on a whiskey sour using a cocktail syrup I made from blueberry jam

Hi Steven, yes it will. Sometimes, depending on the ingredients, the drink will keep some color but it will be clear, if that makes sense.

could i do pure alcohol like everclear with water instead of vodka? I always notice the vodka just a tad too much :(. And maybe more water then?

Of course you can do that. You can even start the fat wash without diluting the everclear and dilute it after. The higher the proof the stronger the flavor extraction will be

Can you help me understand what you mean by 37.5% milk to cocktail ratio? How does this translate in terms of how much milk to use? Thank you!

For 100ml of cocktail, you will want to add 37.5ml of milk. Let me know if you have other questions Cheers

Thanks a lot for such a great content! I've also been seraching easier way to make stable foam for coctails. However, I have one question: should it be only methyl cellulose or carboxymethyl cellulose also works well? In case you've tried this variona, pls share the opinion.

According to Kevin Kos: CMC or carboxy methylcellulose is not a suitable option, because it has a lower water retention rate. So go for pure, food grade methylcellulose (Methocel F50)

The higher the proof, the better you will be able to dissolve the oils. Especially orange oils because they are harder to dissolve compare to others. If you use lower proof, it will separate but it’s not a big deal as long as you shake it each time before spraying it.

It’s recommended you make it in advance because the filtering process can be a bit long. Also it is shelf stable so it’s not a problem to batch it ahead of time

I've tried making foams using Methylcellulose and Xanthan Gum before, and it really does work great. We've done foams using other methods at our bar, but the texture is just not up to what those two ingredients can do. I've noticed that you don't heat up a part of the foam base to dissolve the Methylcellulose, while guys like Kevin Kos state that it's necessary to do that for the MC to dissolve properly. I've also experienced clumbing with the MC if it's not heated enough. Any advice or thoughts on this?

Thanks for this great video. Solves the issue of finding stable foam that I have yet to achieve. I have a quart size (bigger than the size you recommend) iSi whipper. If you already only owned the bigger size, would you also invest in the smaller size? Unrelated question: does the foam quality differ depending on how long it’s refrigerated? Is 30min foam better than foam refrigerated day prior to serving?

I would love to see a video on making a different type of foam - the one that is referred to as “air” and uses soy lecithin. What are optimal ways to infuse flavors into it and maximize its “airy-ness”. Thanks!!!
