As someone who plays a lot of CCM (I play for a small church choir and generally handle the more modern stuff), I can tell you that this is basically how they do accompaniments, with a few things they tend to add such as melodic riffs on top. However, when I go out and listen to contemporary pop music from more mainstream sources, I hear basically the same stuff. Accompaniment is basically background music for the vocalist, and it's played like background music.

Many years ago, I was messing around at the piano in the student lounge at college and someone came up to me and told me there was gonna be a memorial service for a student who had passed away and asked if I'd like to play some music for it. Now, I didn't know the student and definitely didn't think about what I would play songwise. She said just some light background stuff is all they were looking for beforehand and after. I agreed. I used these exact techniques and everyone came up to me afterward and told me it was perfect and very beautiful. They were so grateful. I was told that the girl who had passed played much in the same way. The girl who asked me to play even paid me for the time. I reluctantly accepted after refusing repeatedly!!

I need to have roughly an hour and a half of music to play somewhere in the middle of April for my first ever paid 'commission' as a pianist (I don't even have an actual job, it's for my mom's friend!) and I was freaking out about how I was going to cram tens of songs into my brain, learn them, and get them sounding good.
