I started taking notes by hand and realized how bad my handwriting had gotten. I decided to practice cursive using a fountain pen, and it really has made a big difference. I am more mindful during the process, and am now a fountain pen enthusiast.

Very much the same here. Bullet Journaling and Motorcycling has helped my post burnout depression. What I believe @TravisMedia missed in this good video is the ability to create collections on short term analog journaling. My own practise is operational stuff in the bullet journal, using separate note pages (bujo collections) for each story in a sprint. Long term information like how I learned Angular Signals go into Obsidian that is saved to my DropBox to be pulled and synced everywhere.

I’ve refined my process for this over and over throughout the years. I’ve settled on a monthly “lab log” that has a reverse chronology dump of anything. It’s in plain text. Easy in, and searchable. It’s not meant for anyone but me, so anything is allowed in there. It’s so cool to be able to pull up an old note and see what I was working on at any given time.

There use to be a yime when we all went to church, or worked together, or sat around a relatives dinner table and told stories. I lost all of those stories because my family moved away from our hometown with roots. If i return I hear decades of history which I have no real connection to. Now if its longer than 20 minutes you get the itch to pull out your phone. Its kind of sick. I hear my friends talking about how annoying their kids are and how they dont have time for themselves. Things are going in the wrong direction. I still take notes.

When I am watching a coding-related tutorial or a theoretical concept, whether on KZbin or some other site, the note-taking approach I use is first watching the whole video to understand the topic and then watching the video again and pausing where needed to take detailed notes on the subject. Although I can take very detailed notes in this way, which will help me review later, this approach is very time-consuming. How do you suggest taking notes regarding this particular case?

Did you even watch the video? If you don't want to use an app you can just use pen and paper. If you still prefer digital, you can just create markdown files and use a git repo. Or you can create your own app to manage your notes as you like.
