Notice how the dough springs back when on the paddle. It’s cause the glutens are worked up again after stretching it and rolling it, which creates more of a rubber type texture creating more of a chewy pizza. It’s best to minimise working the dough after the final rest which will give a better result. Best to use your fingers over a rolling pin. Cheers

This oven costs $1250 in Australia. I have 4 young kids and pizza nights cost us around $60 each time, with a bit of leftovers for the next day. 1250 (cost of oven) ÷ 60 (cost of pizza nights) = 20.8 (my money recovered after this many avoided visits to the pizza shop) My family can eat pizza 20.8 times in a year, therefore I'd be saving money in the long run. If you have a big family buying this oven might be worthwhile for you

@@xxkissmeketutxx But you must take into account the cost of your ingredients that you use at home. And not to mention cost of electricity. Typical family will take a fews years for this oven to pay for itself.

Hi Ellen! Thank you! Yes, you have to season the stone too....you season the stone the same way you season the deep dish pan. Once you season the stone or the deep dish pan...periodically you need to re season it. =) Good luck at your cooking class!!

it takes a minute or two depending how long you leave door open. It heats right back up pretty quickly.

I have the newer model of this Breville Pizzaiolo oven and when I put it manually on maximum and heat it up, I used a laser gun thermometer and it measured 870F on the stone! That means it can reach 900F exactly like a wood burning oven outdoors! Simply Amazing!

Hi! Yes, my counter is granite. The oven is raised up on feet so my counter did not get hot. Your granite counter should be fine with the oven sitting on it =) . Hope this helps!

I used to program CNC machines at a Granite countertop fabrication shop... Granite can handle several hundred degrees without damage. We used to cook steaks on Granite used for countertops and a torch under it. Wiped right off. No damage

Thank you very much for the review of the oven, certainly the Margherita pizza is slightly different (like dough, hydration, preparation), but I can understand that by changing the country the recipes are updated and modified.

Pan pizza is inherently suppose to be much thicker than thin crust or neopolitan pizza. You can't achieve a neopolitan with a thick crust otherwise you'll just be eating raw dough. This product is truly a niche. Who on earth can justify $1000 for an oven? Not many, I suspect.

As much as I want to like this product, at $800? No. A toaster oven and mini baking steel will produce the same results (at less than half the price), especially if/when you're preheating for 20 minutes

Technically you're looking for their mini griddle... But at $150, there are still some less expensive alternatives like a round cast iron griddle or square griddles and cutting the handle off to make it fit in your toaster oven. shop.bakingsteel.com/collections/griddles/products/mini

I would imagine that cast iron griddle would get hotter faster, due to being black and weighing less/thinner. Or at least that's been my experience on the stove.

Ken Leung Hi! I doubt a toaster oven could get the same results.. But again that price isn’t justified. You can get for 600$ a Roccbox, and cook neapolitan pizza in 60 seconds! You can use gas and wood to heat the thing up. Temperatures get as high as 500 degrees!! You could also get a uuni for like 300$ and get amazing results
