That was very informative and I’ve always thought fresh was better….I wonder if vacuum packing before freezing would change the dynamic?

I always freeze my stakes before I cook them. I have consistently better results with the frozen ones in regards to taste, juiciness, tenderness and texture. I cook them frozen though since they are semi ruined upon unfreazing prior to cooking.

As someone else pointed out, a vacuum seal might make a difference Yes yo had it in a Tupperware container but that's not quite the same as a vacuum seal as air in the container could have caused degradation. Since were both on the Delmarva Peninsula, you can borrow mine and maybe be a guest on your video about this!

I'd have to go a long way to find a local Butcher who DIDN'T freeze all his meat. all the ribeye, all the rump... all frozen. living in England, finding good BBQ meat is a hassle. and the price goes through the roof for anything done properly! ...I want my own farm.

Well I appreciate you going through the taste test efforts. I can get my steaks fresh as well as aged because I can buy the cow (or part of a cow). Obviously a good part of said cow will be frozen and then vacuum sealed. Now here's the kicker, speaking as a forester and really I'm not hugging trees all day I'm doing math. While you were in fact working to discern a difference and I appreciate this you nonetheless had a 50/50 shot of guessing that right. Scientifically you need a larger sampling and you certainly could throw your wife in for the test. Actually make a few of those old-fashions and throw a picnic. Thanks for the video my son-in-law needs to see it, you look straight out of Minnesota. Cheers
