जब वेजिटेबल बिरयानी बनाई जाती है, तो चावल को अलग से पकाया जाता है और सब्ज़ियों/मसाला को अलग से पकाया जाता है। फिर आधे पके चावल और सब्ज़ियों को एक बड़े बर्तन में परतों में रखा जाता है और फिर धीमी आंच पर पकाया जाता है। सब्ज़ियों/मसाले को चावल में डालने से पहले भूनना पड़ता है, तभी इसे वेज बिरयानी कहा जाता है
