Do you have a mixed household like I do? David likes beans in his chili. I don't. With this method, you don't have to choose. Put both types on the shelf in one batch. Not to mention, this recipe, Based on Brian Lagerstrom's "30 minute Chili with Slow Cooked Flavor" is definitely my best chili yet.

The recipe as I made it in the video made 12 pints (2 of those with beans). Quantity of pints will increase with number of jars with added beans. If you plan to eat some fresh, be sure to thoroughly cook any beans that won't be pressure canned. Feel free to adjust the heat level to suit you.
1/4 cup dried red kidney beans per pint to be soaked 24 hours. (Note that this should make 1/2 cup soaked beans per pint.)
5lbs ground beef, browned in crumbles and drained
1 jumbo onion, diced
1/4 cup chili powder
1/4 cup ancho chili powder
3T cumin powder
1.5T garlic powder
1/4 cup paprika
4tsp salt, divided
2 14oz cans fire roasted tomatoes, with liquid
5 14 oz cans diced tomatoes, drained
3T Better than Bullion beef flavor
2 14oz cans tomato sauce
4T Worcestershire sauce
2T apple cider vinegar
3-4tsp sugar or heat stable sugar substitute (I used Allulose)
1/2tsp molasses
6T tomato paste
Measure, sort, rinse and soak dried red kidney beans 24 hours prior. For each pint that will be "with beans", measure 1/4cup dry beans. This will equate to 1/2 cup soaked beans to add to each "with beans" pint.
Brown the ground beef in a large stockpot, chopping into crumbles. Drain, reserving liquid in case you need to add some later. Set aside.
Add the diced onion, along with a bit of fat to keep it from sticking, to the same pot that the beef was cooked in. Saute until translucent. Add chili powder, ancho chili powder, cumin, garlic powder, paprika and 2 teaspoons of salt. Stir to toast the spices for about a minute. Add the fire roasted tomatoes with their liquid and the drained diced tomatoes. Stir to combine. Add Better than Bullion, tomato sauce, Worcestershire, apple cider vinegar, sugar, molasses ad tomato paste. Mix and bring to simmer. Taste for seasoning/heat, and adjust as needed. (I made no adjustments.)
Season the meat (I added the remaining 2tsp) and add meat to the pot. Stir to combine and return to simmer while jars and canner are prepared.
You will need hot clean jars and a reasonably hot prepared canner.
Add 1/2 cup soaked beans to each jar that will be a Chili with Beans jar. Top off these jars with chili, leaving a generous 1" headspace and debubble, paying special attention to getting the beans mixed into the chili. (I waited to do this and struggled a bit getting the beans off the bottom of the jar.) Be sure to note that these are the jars with beans.
Fill the remaining jars with just the chili mixture, as is. Leave a generous 1" headspace.
Wipe all the rims thoroughly, apply new lids and rings. Be sure to note which jars have the beans so there's no guessing after processing. Process pints for 75 minutes at 10 pounds of pressure if under 1000ft. Please check the altitude chart below if you need to adjust.
NOTE: I did not test this in quarts, which would require 90 minute processing time. The plain chili should work perfectly, but I can't guarantee that the beans would be as perfect as I think they are in the pints processed for 75 minutes.

I can give you two hints about the onion. One those choppers work wonderfully with Cutting down the amount of tears. I don’t cry at all when I use it. And two my daughter gave me this tip along time ago is to set a little candle close to your Cutting board and burn it while you’re chopping. That has worked for me also.

The only thing that saves me from tears when cutting onions is 1. someone else cutting or 2. a snorkeling mask. I made chili last weekend with plant based ground meat substitute since it was something the whole house could agree on, but, as of Thursday, the vegetarian child has left for new opportunities and the household can return to having real meat in meals. This is a good opportunity to use up some of the hamburger in the freezer, so thanks for the inspiration, Carter. I have that meat masher in my Amazon cart. Maybe it, or other products you recommend, will be included in the Amazon spring sale? I don’t have an affiliate account to check it, tho.

Yes. Someone else cutting them works for me! The meat masher doesn't appear to be in the Spring sale; however, don't pay its current ridiculous list price. I paid $12 for it. The current $17 is crazy.

Glad to see that others misjudged the size of the pot needed. My first chilli canning adventure resulted in the purchase of a 23qt pot to finish the job. Can't say it was a bad purchase because I've used it many times for fruits, stews, and sauces. It's just as easy to do an extra large batch to can and a meal or two.

When I make chili, instead of canned tomatoes/sauce whatever, I use V8 juice. The seasonings in it really add to the chili.

Try putting your onions in the freezer. They are easy to chop. And also I chop onions and freeze them. when I need them they are ready to use. I want you to know that I really enjoy your videos. 1/2 cup uncooked beans is a lot in a pint jar with such a thick sauce. Seems like the sauce should have been thinner for those. Beans are funny. They continue to absorb liquid over time as they sit on the shelf after processing. Maybe consuming them within a month or so, it would be ok, but I would make the chili thinner for long term storage. Looking forward to trying this recipe. Bet it will have a fab depth of flavor. Hey. Love your channel. For the onion problem, Google onion goggles. Saw Chelsea at Little Mountain Farm use them. Kitchen is looking great. We had suggested putting the exhaust fan in the pantry when cooking with the air fryer. Mine discolored the wall. Can't wait to try this chili. Thanks for all you do!

I love this video. The taste test at the end was awesome! We don't use a lot of onions in my house except for salsa. But when we have to chop onions, i have a Tupperware chopper that i use, no tears. We also have that meat masher, but we got ours at dollar tree. I saw a lot of people use it but i wanted to really see if it was worth it without spending a ton. We've had the one from dollar tree for 2 years now. Thank you for another awesome video. I love your kitchen

I love chili! Love beans too but for some reason I always find that kidney beans are a bit tough. The white kidney beans however are okay. I usually put 2 different beans in. Since I canned so many I might just put them in after like yourself. I like a dollop of sour cream on mine as it takes the heat down a bit. The color of that chili when you pulled it out of the canner was incredible. That adobe spice really did it. I must try that. Thank you for the recipe. Nice to see David as always. Cheers!

Hi Carter! My family has a Texas brick chili made from suet. It has been in the family over 100 years. I think they owned a restaurant. It made 10 bricks. One brick to a pot of pintos or kidneys. That's a lot of chili with beans lol. Yours looks great. I'm heading out in the morning time to visit that baby of mine that is almost a toddler. Spent the week freeze drying slaw with carrots, berries, mashed potatoes, chicken salad, mushrooms, and onions. Still have 3 loads in freezer to go in when I return. Have a wonderful Easter.

Btw, 24 potatoes went into the beds as did broccoli and bok choi. Asparagus is coming in, onions garlic and celery all growing well. The green house herbs will need to be picked and dried again and next will be peppers tomatoes artichokes and green beans.

I had to look up brick chili! I bet your family recipe is fantastic! Have a wonderful time with the grandkids. I hope your local family has committed to watering the garden and greenhouse while you're gone. For the chicken salad, did it have mayo in it? M potatoes, broccoli, cauli, kale, cabbage, spinach and swiss chard are in as well. The garlic is doing great, and my onions are hanging in there. Happy Easter!

Good morning Carter! I can like you do.... One of my most valued tools is made by Oxo. It is a fast separator that pours directly out of center bottom, leaving the fat behind.. now all the beef flavor goes back in your chili!

That looks yummy! Thanks for sharing the recipe. I've read that holding a match (unstruck) between your teeth helps with tears. Something to do with the sulphur in the match tip.

I've had a can of Campbell's Cream of Chicken soup do the same thing to me when I opened it. It was not past the "best buy" date either. Like you, I tossed and did not use it. Something is definitely not right when that happens and I was not taking a chance on anyone in my family getting sick over it. The chili looks delicious btw!

I like chili with beans and ground beef but I also love the Texas chili which does not have beans. When I make chili with beans I use black beans and small red beans. I have a recipe I have used for years it’s a family favorite.

I just made this recipe and it is DELICIOUS. I did not have to adjust anything. First time making chili. Will definitely make more. Thank you so much. EDIT: I also did not have chile ancho in powder in the house, but went to the store and found packages of dried whole chile ancho and put it in my Ninja blender and voilá did not have to buy it online, which was wonderful, otherwise, would not have been able to make it as fast as I did.

I had some cans of tomato sauce in my pantry of the same brand as your diced tomatoes and it did the same thing as you described..it actually hurt my hand so I went through the remaining ones and found one with a slightly pumped up lid that I hadn’t noticed on the one I opened. I tossed them both. I was trying to work through those that I purchased as my tomatoes are looking like a bumper crop and I plan to can diced,crushed and sauce from my tomatoes.

Have you ever made a chili from leftover smoked brisket? That's the best I've ever made. My husband makes chili once a year (giant pot) and he is very big on using fresh peppers. He uses habanero & jalapeños. If they have any, he might add poblano. He also uses powders. He makes so much that it's not a knock your socks off. He uses kidney beans after he takes out some to have with no beans. He does the all day simmer. For some reason, chili became his favorite thing to cook but only once a year because he makes so much. Some goes to our daughter and the rest goes into the pantry and freezer.

I do have one comment that may be contrary to your opinion. It is my belief that tomatoes are an integral part of a Chili and I love to celebrate them when I make it. Seeing how many tomato products you put into this i believe they are a star as well and maybe should be celebrated as much as the ground beef.

Hello I am new to the channel. I just found you tonight and I am excited to learn about canning and recipes for canning. I just purchased my first canner it is the electronic presto. Looking forward to trying and canning this recipe. I have never used a canner before but I would like to try this recipe. If I used canned kidney beans from the store with this recipe and then canned them would they turn to mush??

Welcome! Congratulations on jumping into canning! You will love the Presto Electric canner. It's become my go-to pressure canner these days, and I never expected anything to replace my All American stovetop canner. Regarding the canned kidney beans...I do think they will be very mushy. Essentially, they'll be re-cooked for 75 minutes under pressure, if you add them to this recipe. The soaked dry beans are very easy and come out with a great texture. Do let me know if you give the recipe a try. Hope you find lots of recipes that appeal to you on the channel!

We make ground beef with pinto beans: 5 lbs. 70/30, 1 lb. onion, 1 lb. soaked beans, chili powder, cumin, onion powder, garlic powder, Mexican oregano. Near the end we add salt, and Hatch chilies. We also make an old recipe of Craig Claiborne’s, Real Texas Chili. Half beef chunks, half pork chunks, NO beans unless on the side. Carter, did you try running a fan over the onion while peeling and chopping it?

Thanks, Carter, for sharing this recipe. Personally, I like small red beans or small light red kidney beans in chili. I like tomatoes, but the ratio of meat & beans to tomatoes in this recipe would not make my tummy too happy. Otherwise, I will be using your recipe soon to can up some chili, but a bit more beans per jar, and a little less tomatoes. Your kitchen remodel is gorgeous, but your older one was beautiful as well.

If you have a gas stove, turn flame on and cut onions next to the flame. The flame attracts the onion fumes. I've tried this and found it works.

Carter...I love your canning videos. I am a big canner and love having the pantry stocked. Question... someone gave me a gallon can of Wolf Chili with NO Beans. I want to break it down to half pint jars to use for chili dogs. Can I just hot water bath it 25-39 minutes?

That's a lot of chili! I would still pressure can for 75 minutes. It'll be exposed to whatever is floating around in the air as soon as you open it. It may break down a bit at full processing time, but to me, hot dog chili is a bit more broken down anyway.

Yep! It holds 5 quarts (reg or wide), 7 wide mouth pints, 8 regular mouth pints or 10 jelly jars.

Carter I have a question? I am soaking some pintos overnight to can tomorrow. This will be my first run. I have noticed that about half of the beans are shedding their skin and splitting? Is there something wrong with the beans? Should I not can these? Please help. I also bought some meat to can also.

Hmmm. I'm not sure why they're doing this, but I don't have experience with pintos. I would worry about them getting too mushy in processing, if they've shed their skins. Wish I had a better answer for you.

Amazon sells onion cutting glasses that looks like glasses and go on like glasses. They are really goggles that look like glasses. They work and they are cheap.

I would need to review the ingredients to give you my thoughts on safety, but I will say that you will likely be quite disappointed in the texture of fully cooked beans that are then pressure canned. If I had extra cooked chili with beans, my first choice for preserving it would be the freezer.

Use a steel on your knife before you cut your onions. The sharper your knife is the less rupturing of cells and less onion juice squirting into the air around you will happen.
