I store both nonfat and whole milk powder (the brands I buy come in sealed #10 cans so shelf life is much better). I make my own powdered milk blend by mixing 1 part nonfat with 1 part whole milk (I keep my blend vacuum sealed in a mason jar to maximize shelf life). Making powdered milk taste good is all about ignoring the instructions on the package... Using my nonfat and whole milk blend I mix like this: 1 cup powdered milk blend 1 quart water SMALL pinch salt 1 drop liquid sweetener Whisk well and chill - absolutely delicious!!
@SomeBuddy777Ай бұрын
@carolt392 YES! I do the same, not exactly but very similar. I use the same water to powder ratio: 1 quart water to 1 Cup powdered nonfat dry milk. I also use warm water, not boiling, because it helps the powder dissolve a little more easily. After mixing, I add 1/2 to 1 teaspoonful of vanilla, a few grains/smidgen/just a pinch of salt (depending on the grind), and about 2-3 drops of liquid sweetener. The discrepancy in the amounts of the salt, vanilla, and sweetener will depend upon the brand and type. Finely ground salt is more dense, so use less. Some extracts can be more concentrated. The sweetener will depend upon the type, brand, and variety of sweeteners used. Storing the freshly reconstituted milk overnight in the refrigerator will also improve its flavor. This recipe will need tweaking to fit you and your family's personal tastes. 👌 If you have children, they may enjoy a little more vanilla and sweetener added to it, especially if they drink it straight or use it on their bowls of cereal. It is similar to the taste of the milk mixture that Mom's used to make snow ice cream with! Other flavorings like strawberry, cherry, or banana might be appealing to children. Do a trial run with them first, just flavor a cup with any of the new flavors to determine whether they like them before mixing up larger quantities. Even with the extra added vanilla and sweetener it can still be used to cook with, just not with savory dishes like gravies, though. Bon appétit! 😋 🥛

I'm not much of a milk drinker, so I usually don't buy fresh milk. The night before the grandkids come over, I mix up some Nido milk, using boiling water and a couple of drops of vanilla, pour it in quart jars, and put it in the refrigerator to chill. The grandkids seem to be fine with it. We often stir in some strawberry powder (made from strawberries which were dehydrated and then ground into a powder) to make it more special.

When you need buttermilk - place a puck in a mason jar and let thaw, fill with fresh or mixed powdered milk, mix well, and let sit at room temperature 24-48 hours stirring once or twice a day - the buttermilk puck has all the live bacterial cultures to turn your fresh milk into a new batch of buttermilk! I’m an elderly disabled veteran who because I grew up on the instant non fat milk I prefer milk the liquid form more. However yes income has its limitations and lately I use a food service company like meals on wheels and they send me powder to make milk. I tend to add less water and chill it overnight to make sure it’s thoroughly blended. But if you make too much you should shake it up before each use. My parents used to mix the powder into the milk jug from the store and blend the powdered milk with whole milk or 2%. So that being said I have experience as a chef and I use powdered milk for biscuits and gravy, to make my pot pies have a creamy texture for my chicken and turkey style pies. I make creamy corn and a mean crab and corn chowder. Yeah I’ve learned to improvise if needed. I worked on a cruise vessel and well if you run out of an ingredient you can’t just run out to your local grocery store. So I’ve had to substitute things like leaf lettuce for romaine because the romaine was rotten. Yeah sorry but I don’t trust eating food on a moving Petri dish in the middle of the ocean. Yeah I saw so many violations against health regulations it will make you never eat anything cooked except in your kitchen. And the disgusting content seen on KZbin about poor food safety and I’m feeling nauseated just thinking about the things I’ve personally seen

Powdered milk also makes the best yoghurt. Make it up with extra milk powder (I use 200g of milk powder for 1L of yoghurt, whereas 1L of milk is 140g of powder - sorry, don't know it in freedom units) and add a couple of tablespoons of the previous batch of yoghurt (store bought the first time), then whack it in the Instant Pot on the yoghurt setting for 8 hours. No need to pre-boil with powdered milk. It makes the thickest, creamiest, most luscious yoghurt I've ever had and it costs me about $2 for a litre rather than $6-7. Add a sweetener if you want. I don't as I like to add a bit on top when I dish it up.

@@litaknowes7294 it’s amazingly good isn’t it! Better than store bought. For anyone without an instant pot, heat the mixed up milk to about 43°C (110°F), then mix in your yoghurt from a previous batch. Pour into a container and incubate it. Wrap it up in towels and/or blankets and put it in an insulated cooler, or in the switched off oven (turning the light on is helpful) or some other warm place for 8 hours. It’s not quite as thick as with the instant pot, which is almost scoopable like ice cream, but it’s about the same consistency as store bought yoghurt.

Just recently, I spied shelf-stable milk. OK - I'd never noticed this before, it's on the very bottom shelf near the pie filling (I make my own pie filling, so don't look there). I bought whole and 2-percent. It isn't bad. A carton of it is the same price as a gallon of milk, but it lasts a few months. I'll remember it next winter (because I wrote in on the calendar, LOL), to stock up on before blizzards. Also, I've always put some milk in the freezer in fall for winter storms. I just wash out the big peanut butter jars. You have to shake it up, but it is fine. Someday....we'll have our Nigerian Dwarf goats for milk and cheese. Edited to add: I keep the buttermilk powder on hand, too. I bought A2/A2 whole powdered milk. The organic stuff from Azure's partner the Alexander farm people. It came in a big paper sack so of course it had to be repackaged for long term storage. I used 5 gallon buckets with oxygen absorbers and food grade plastic liners. Now I'm wondering if I shouldn't repackage again in glass half gallon jars. Azure has those nice green tinted jars plus my vacuum packaging capabilities. Thanks for another thought provoking video.

I use it all the time. However you've just helped me out . I now know how long it'll last when I seal it in my ball jars . Thanks Lisa 😊

I keep all my powdered milk in the freezer. What I currently use for baking is in an airtight container in my fridge. Never had a problem.

I buy Parmalot milk for the pantry. 100% whole milk, shelf stabile for 3-6 months. It’s all we drink or use.

It's great to have on the shelf when you cook. I really like the Nido one it tastes a little richer to me if you need buttermilk in a pinch just add a little white vinegar to your milk I buy powder buttermilk and make homemade ranch dressing in a jar with it as well.

Hi Leisa 👋🏻 I buy a jug or 2 of buttermilk during Green Tomato season. The powder does the trick the rest of the year. I like Nido milk, so I've learned to rotate it. I found a few bread recipes that call for it.

Great information. I use nonfat and powdered milk. I haven't tried the whole milk for daily use. I always put the milk powder in a Mason jar when I open it, but hearing your research is it better in its own packaging for long term storage. Thanks.

My Gramm used dry milk alot as thickener like in bisque soups, chowder, etc. I'm lactose intolerant but my body tolerates dry milk better.

What about storing the milk powder in quart canning jars? I recycle milk jugs by washing them out and use them to store water. By the way I enjoy your humor.

Part of what I plan to use the powdered milk for is to add to potato flakes for mashed potatoes. My thought is to powdered butter and powdered milk to the potato flakes and reconstitute them together. Thoughts about this?

I generally don’t drink milk, but I keep non-fat dry, Nido, whey powder, non-dairy coffee creamer, dry buttermilk, hot chocolate powder, uht milk, uht half & half. I make coffee drinks, cooking & baking, never ever buy refrigerated milk. No waste for decades.
