Ingredients:
3 x 80g tins, Italian tuna
3 tbsp greek yogurt
1 tsp mustard
6 gherkins, finely chopped
1 tsp gherkin juice
1 garlic, minced
1/4 cup chives, finely chopped
1 red onion, finely diced
1/4 cup wine vinegar
3/4 cup water
8 large romaine lettuce leaves
8 coriander stems, leaves only
Salt and pepper, QB
4 large soft tortillas
First, soak the red onions in wine vinegar and water for 10-15 minutes, then drain.
In a bowl, add greek yogurt, mustard, gherkins, gherkin juice, garlic, onions, chives, salt and pepper. Mix well. Then, add in the tuna and mix together.
On each wrap, add two lettuce leaves, the tuna mix, and some coriander leaves. Wrap the tortilla shells by closing both ends and rolling tight. In a dry hot frying pan, add the tortilla shells with the fold side down and cook until all sides are golden and crispy. Serve immediately. Enjoy!
