For those considering a vegan lifestyle because you're a compassionate human but not really knowing where to start? You don't really know what to eat now that you've ditched meat and dairy.. Figuring out what you can eat can be quite confusing and intimidating even for those who didn't really care about what they were putting into their bodies prior to going vegan. But as an Indian, you're already halfway there. We eat plant-based most of the time! It’s just that dairy’s the issue. So if you don’t want to support the cruel dairy industry but don’t want to burn a hole in your pocket either, I’ve got you covered with a simple, nutritious, budget-friendly meal plan. Let’s dive in. But first let's talk about two essential nutrients: Vitamin B12 and D3 Vitamin D3: If you're not getting 25-30 minutes of sunlight 3-4 times a week, you might struggle with vitamin D3. Honestly, even carnivores (and I'm talking about people) can’t get enough from food alone. So, either supplement weekly or get outside more. Vitamin B12: You can take B12 shots (I do this every alternate month) or pop a pill once a week. It's completely safe! Just be cautious with fat-soluble vitamins like D3, so check with your doctor before starting a supplement. Multivitamins: You can also take a multivitamin like Axvex or Zincovit, especially if you're a busy pre-med or student. Protein-Rich Vegan Staples: Chickpeas Soy chunks (super cheap, healthy, and full of high quality protein.. I eat em 4-5 times a week) Soybeans / Tofu Kidney beans / Mung beans Lentils (mix them up for variety!) Legumes and pulses in general are fantastic (Chickpeas, kidney beans, mung beans, urad dal (dosa, yum!) , pigeon peas (toor dal), black-eyed peas (lobia), masoor dal (red lentils), and tuvar dal (yellow lentils) are great protein sources. Quinoa (cheap and super healthy) Amaranth (muesli from Peepal Farm is great) Millets (Indians love these; not super high in protein, but they’re amazing) Chia seeds (packed with protein and healthy fats, just soak them) Flax seeds (a total superfood) (I'll be disappointed if you did not grind it!) Sprouted mung bean/red chickpea/chickpeas (lightly boil em for better digestion and absorption) Green peas Hemp seeds (if you can get them, they’re great) Tempeh (If you have access to it, it's one of the best foods to eat. Also, it's the best soy food after natto. It's fermented and superbly high in protein, even more so than tofu. .. it might take some time to get used to the flavour and learn to prepare it right ,which is actually totally awesome) Nuts and seeds (great for protein and healthy fats) If you can afford peanut , then that's totally fine.. it's amazing but just make sure to buy good fresh ones which aren't too old. Other good options include- almonds (wanna look youthful, eat soaked almonds daily. Dr. Dray has a video on this. do check her out), walnuts (If I ever had to choose only one nut to eat for the rest of my life, it would be walnuts.), dates(want calories and nutrients? Craving something sweet? Eat these! ), pistachios (I honestly can't afford this but you do you), cashew nuts(eat in moderation, that's the general recommendation but do I care? You bet I do, ain't going bankrupt anytime soon!) Here's what i do- 4-5 walnuts-5dates+5-6 cashews+5-6raisins+5 soaked almond (feel free to make your own combinations,You do you, boo!) Greens & Vegetables: Cabbage, cauliflower, broccoli, Brussels sprouts (if available) Spinach, kale Beetroot Carrots Cucumber Amla (superfood fruit) Bell peppers 🫑 Bitter gourd And the list goes on! Don’t forget to go local and regional. India has a rich variety of vegetables and I haven't named any regional Vegetable, ironic?! Other Essentials: Peanut butter (try Peepal Farm’s or make it yourself, it's easy!) Fresh herbs like curry leaves and coriander Spices for that extra flavor boost! Oils (Don't be afraid of oils, but do limit the intake of refined oils as they aren't the best. Even rice bran oil from name brands isn't that great, but it's fine. I mostly use mustard oil and sometimes olive oil. Other beautiful, but expensive choices would be avocado oil and/or high-quality canola oil.) Some Meal Ideas (The Good Stuff): Dosa (my fave! And i don't prepare it the traditional way. I add more dal than rice to dosa batter, sambhar has more daal and vegetables but it's not too thick and coconut chutney, you can't forget that!) Lentil curry with rice Daal (there's no one way to prepare dal..taste differs with the how you prepare it.. experiment and make most out of your time in the kitchen) (Ugh, did you asked for My personal favourite ? It's roasted toor daal tempered with mustard seeds, hing , dried red chillies in mustard oil..also, I'm not scared of oils, especially cold pressed mustard oil..simple but beautiful..goes well with rice) Rajma chawal Idli sambar Indian-style chili (chickpeas, rajma, roughly ground soy chunks, veggies(carrots+onion+garlic+🫑 bell pepper), and tomato puree..can be eaten like paw bhaji) Yellow pea chaat Tomato+red lentil+mushroom+veggies(carrots+cauliflower+garlic+caramelized onions)+black pepper + (sometimes) an apple. And it's so thick and creamy Litti chokha Soychunk biryani Soychunk aloo ki sabzi (with little to no oil🤤) Chana masala (chickpea curry) Oat porridge with apples, bananas, and chia seeds Sprouted mung bean salad (boiled sprouted mung bean+apples+grated carrots+cucumber+pomegranate (optional)) Chickpea salad (optionally sprouted boiled chickpeas+cucumbers+cilantro(dhaniya)+tomatoes+onion+lime/lemon juice+BLACK SALT Quinoa and oat cinnamon banana porridge Black mung dal with lime juice South Indian-style besan tofu with curry leaves and mustard seeds Black/green(you decide) mung dal with lime juice South Indian-style besan tofu with curry leaves and mustard seeds (don't get confused.. it's not real tofu..more like burmese tofu made from besan or red lentils) Chola chana chaat with aloo tikki (we like it bland) Flax seed and jaggery dumplings Red lentil uttapam Yellow pea chaat Mung bean khichdi with quinoa, daliya, and millet khaman dhokla Daal dhokla Pakal tofu paneer Mushroom biryani Oat dense chocolate fudge cake (for dessert!) Mix veg soybean sabzi (kinda like soup, but tasty) High-protein muesli Tofu scramble (we make homemade tofu) Whole mung dal with lime juice and onion (served with roti) Savoury Quinoa mung bean khichdi cum porridge in yogurt tempered with roasted peanuts+mustard seeds+a boatload of curry leaves+dried red chillies (I eat this so very often) Whole mung dal with lime juice and onion (served with roti) Mushroom hummus pasta Hummus recipe (boiled chickpeas+homemade tehini+caramelized onions+garlic+lemon juice)salt+pepper Tehini (it's basically sesame butter) How I Do It: I make sure to have at least two protein-rich dishes each day. For example, chana masala in the morning and quinoa khichdi for lunch or dinner. It keeps me going and nourished. Ugh, and I also snack on carrots+homemade hummus . For third meal I could have something light or heavy which usually still has some kind of protein in it but sometimes it's just aloo paratha. Also, do not shy away from keeping multiple sources of protein and leafy greens in your plate.. (eg- chawal daal+saag+chickpea/soybean/rajma curry or red lentil pakora shallow fried in the tiniest amount of oil possible+ sauted cauliflower (bhujia)+salad). I DON'T EAT OUT! And that saves money and benefits my health. I don't buy "mock" vegan stuff. Tip: Customize your meal plan so that it caters to your unique requirements! What works for me might be different for you, so make a list of your essentials and go from there. Resources (especially if you're totally clueless about cooking)- DIKSHA PATGIRI (no one eats like her- just don't eat as many chillies) Peepal farm products (fun to watch) This guide should make it easy for you to transition into a vegan lifestyle. Enjoy the journey, and feel free to get creative in the kitchen!

Hey Shreya, great work! I have been interested in finding out what really goes into those people's minds who eat animals but with the same breath claim to fight for animal rights and suddenly become animal lovers. Any book or article that talks about this in great detail? I'm interested in knowing about the argument psychologically that these people tell themselves!
