Jack is not bad. Peeps just dont know how to cook it. Definitely bleed it!! It's a matter of how you prep and cook it. You can either brine it and smoke it or just smoke it with you choice of seasoning.

I have not yet caught a jack, but would definitely give a smaller one a taste test. I imagine it's like a lot of others with the blood line. I'll cut it out and give it a shot.
