Depends where you were and who you were. Education was actually used for more practical reasons at that point. So in the south, they would have been learning about agriculture and basic business etiquette. In the north, education was often focused on law. Of course if you were rich enough, you could study something like science. Religion was also a big part of education. There was a big push for literacy because one of the outcomes of the protestant reformation was that everyone should be reading the Bible daily. Music(typically piano or voice) was fairly common curriculum aswell.

The only thing the neo confederates are correct about was that the Union didn't initially fight to end slavery, that wouldn't be until the Emancipation Proclamation after Gettysburg. The South fought for slavery the whole time though, especially if you look at the border states in which slavery was "legal" but not really present anymore, they chose to remain with the Union.

Ever notice how during the crack epidemic (which effected black people the most), anyone who used crack was considered a degenerate and people werent empathetic to them at all? Now, during the opioid crisis, you’ve got people being empathetic towards all these opioid addicts (mainly white kids in the suburbs) and actually taking steps to get them real help. Shit like that has happened for a long time in this country but no one wants to acknowledge it.
