Years back I came up with idea of using chocolate marshmallows and Cocoa Krispies and later tried adding about a half a coffee spoon of cocoa powder for extra taste. I'm sure others have had the same idea and added their own twists.

Alton Brown has the greatest recipe for these. You got one part of it, brown the butter. Also lightly, and I mean lightly, toast the cereal in a warm pan or the oven as well. It makes them AMAZING!!!

add a handful of frozen semi sweet chocolate chips when you are mixing. Use frozen morsels so they stay in tact and don't melt into marshmallow mix I also add a drop or 2 of almond extract. and when people taste that very very subtle almond in the background they won't be able to figure out what it is and you just smile and say ' THE SECRET INGREDIENT IS A SECRET

Maybe the difference is that they don’t actually have a preferred brand of puffed rice? Maybe Rice Krispies tastes the same as generic puffed rice? But even so, just use Rice Krispies, so that you can legally use the trademarked name in your videos, and let the viewers figure out that generic versions work fine.

Several fresh ideas...Brown Butter, add Vanilla, and add Salt, I will try these suggestions on my next batch. I prefer to smear the baking pan with butter and butter my hands when pressing the mixture into the pan, it adds to the flavor.

The best "rkt" are scotcharoos, made with peanut butter, sugar, and corn syrup - topped with melted chocolate and butterscotch chips. Not good for you, but great flavor!

I've had problems with the large marshmallows, where they don't melt nicely and they enter into a hard crack stage after cooling down (yes, I was careful with the heat). This same problem also happens with old marshmallows. I only use freshly bought regular marshmallows now.

My wife and I actually had RKTs and CKTs (cocoa) in lieu of a wedding cake at our reception! Great tips! I'm still always trying to make the best RKTs. My favorite so far have been s'mores treats that I tossed on top with a torch, added graham crackers crumbs and a chocolate drizzle to.

absolutely! its all the additives to keep them fresh. and they aren't nearly as inexpensive as doing it yourself. and as this video shows, they take no time to make. you just have to manage to keep the family out of the marshmallows until you decide to make them.

Confirmed this works fine with vegan butter too. Was worried that it would turn out pink as I bought white & pink marshmallows, but it came out classically cream-coloured. Dusted a little ground cereal over the finished pieces to make them less sticky to handle. Thanks Ashley and ATK!

Used to make these as an after-school snack in the microwave. I don't remember the recipe, but I had it down to a single serving. I'd melt everything in a bowl, stir it up, and eat it warm.

Tip-brown the butter well, add a can of sweetened condensed milk then the large marshmallows. Very gooey and dee-lish!

Also, for Christmas, I finely crunch candy cane in a mixer and use a small amount of peppermint extract, with an addition of a (sort of small) amount of alcohol that has a minty after taste. The alcohol I use will remain a secret...I have won many an award for that treat!

I'm always seeing professional chefs using a sharp knife on these Teflon pans. Don't get it. It is a very bad idea.

Depends on how much money you make with that pan. Maybe they can change it very often. I saw a chef sharpening his knives 2 hours every day. It's his payed job. I won't spend 2 hours a day doing this for nothing, but for money would be a good idea.

I agree. It's a lot less expensive to use a plastic edged tool. For example, a cheap plastic bench scraper, dough cutter, or plastic blade made for just this purpose. They're one dollar items. You could even use a free plastic knife of takeout food quality, though it won't always be strong enough. If you want to be fancy, you could buy a nylon-bladed knife. That would be durable and comfortable to use and feel just like using a knife, but wouldn't scratch the finish. It could wear it eventually, as anything can, but that depends on how rough you are with your tools. Softer materials like plastics and woods will not scratch through a non-stick with one rough stroke as metal tools will. I just use one of a couple of dollar store or 99¢ Chinese eBay cheap plastic items that work really well for purposes like these. I've got one that's made for tasks like this that's shaped like a letter opener and a couple of edged bench scraper type thin flexible plastic tools I also use for scraping dough out of a bowl. I've also used a wood or bamboo spatula for some dishes, but they're usually too thick for this kind of work.

The great thing about this dish is that it is gluten free! I can be the hero for Saturday night's dinner...thanks Ashley Three months later I finally made this dish. I once read that I could use the microwave instead of the stove top. I mixed the marshmallows and butter in a medium sized ceramic bowl. Put it in the microwave for 2 minutes. When I opened the door...the marshmallows had expanded to flow over the side of the bowl and onto the glass rotating plate! Such a gooey sticky mess! I'm glad I took your advice about greasing the spatula or I'd have been dead in the water. I used a silicone baking dish which worked out great. One hour later I had Crispy Rice Treats for my next party tomorrow! Thanks again.

6 months late but just wanted to say that regular name brand rice krispies cereal, it isn't gluten free. They use malt on their cereal, which is made from barley, which has gluten. However, some store brands do not use malt and are gluten free.

I remove 2 cups of the cereal and add 1 1/2 cups M&Ms and 1 1/2 cups of Peanuts. Because of the surface contact area of the cereal being greater than the larger additives. I can add 3 cup and take out only 2 cups of cereal. BTW, any nut works and for my sister I have to add golden raisins in place of nuts. Each to their own.

So, just made these…I forgot to add the vanilla extract, but they still came out good amazing because I browned the butter first.. I been meaning to make these for awhile after i gave up on homemade rice krispies because now matter how much butter i added or dirzizled over mine they were never as good as store bought and I could never match that buttery flavor until my lightbulb moment. I actually got the idea of browning the butter after I discovered it made my cookies come out better and i realized how the butter tastes like the butter in RK treats and thats when I realized that must be the secret.. anybody reading this Brown your butter, there’s no other way.. this is like grandma‘s secret. Some of the old women when I was a kid could do sorcery in the kitchen and now I’ve discovered one of their secret magic weapons.

Ngl. I used your recipe but replaced the butter with canna butter and they were amazing!! I got about 8 people very lifted on a 1/2 ounce of double dog can’t even smoke it ditch weed. The trick is, to decarb in a jar !!! Look it up. Anyhoo. Thank you and I’ll be looking for more treats to infuse and enjoy !!

I follow original recipe on box except I add a whole stick butter and 1 tablespoon non alcohol vanilla extract. Sometimes I'll add Ghirardelli chocolate chips with the butter and very slowly melt together. Peanut butter chips work great too. Once I just melted various leftover Halloween candy and you'd get a different taste with every bite. Don't use dry roasted nuts because it prevents treats from sticking, however it's fun to experiment from the original recipe!

The biggest thing is the marshmallows you use. I have found that Jet Puff are the best. They melt the best and taste great.

To make them even better, add to the marshmallow mixture one huge tablespoonful dollop of peanut butter. (Interpret this how you wish, depending on your love of peanut butter.)

I think when used, they are typically added late in the stage (maybe during setting? or late into setting). they would melt I think when you first incorporate the cereal. maybe you could press them down a little bit since the top would be sticky anyways

I lay a layer of parchment paper over the crispy rice cereal and push down. It doesn’t stick to the paper and no sticky hands.

All the "best" recipes for crispies I find say to greatly increase the marshmallows. I think even the base recipe is too sweet, so I actually greatly reduce the marshmallows.

What about using 20 ounces of spreadable marshmallow fluff instead of 20 ounces of cylinders of marshmallow that will melt into the mix? I know it still need to heat to be usable. Any changes to the amounts of butter or salt?

Little tip is to NOT use the large Jet Puff marshmallows. They put too much gelatin in theirs and it changes the texture of the rice crispy bars.

i like them the day of, but the next day they are always rock hard unlike the packaged ones. anybody have any ideas on how to keep them chewy for a couple of days?

Put them in an air-tight container with a couple slices of bread. Also, cut back on the rice krispies a little bit. Mine have come out hard when I use the amount the recipe calls for.

Another reason they may turn out hard is the heat you melt the marshmallows. If you melt them on to high of heat the RKT’s will be hard.

My variation: Instead of vanilla, add real maple syrup. Then add some crumbled bacon. You're welcome.
