I vaguely remember something very similar from my new England grandma's dinner table in Maine as a child except that it's drier and baked in a square pan rather like baked green bean casserole with crumbly top and it's delicious

Not to forget that they didnt do the live killing on scene or live boiling or steaming neccesarily. So it wasnt particularily fresh and pehaps even sickening. Probably why it was prison food

Yes! And get rid of the white wine. Just drink it like normal. I find the METHOD of cooking something GREATLY changes it. Take for instance rabbit, there's HUGE gelatin boiled but fried it's like BETTER than fried chicken. All that gelatinous meat goes REALLY well when it hits the hot oil.

It looks good to me I have dungeness crap scrambled eggs with sharp cheddar salt and white pepper whenever I can get my hands of the crab. Honestly about the best breakfast on earth in my opinion.

Wine and anchovy wrecked it. Get rid of those, add more bread crumbs and more egg and fry it and you've got a FANTASTIC crab cake.

This is one of those recipes where you’re visiting a friend’s house for dinner as a kid and the whole family looks very excited and this is served up as a family favourite and you just have to sit there wondering if your friend is an alien

They weren't even poor, they just beamed with glee when making and eating them like it was something special. I wasn't ashamed to ask "uh... why?" and they were confused with my question... left them alone from then on, must be mold in the walls

I honestly wonder what kind of white wine they are using for this. As this was 18th century Madeira would have been the wine of choice in most households. I would strongly lean towards the original recipe using Sercial, a dry white Madeira which is usually aged more than 5 years. A completely different flavor profile from any common white wine you will find today. Light bodied, citrusy, nutty, and oaky. Like the acidic fruity notes of a New Zealand Sauv Blanc with strong nutty and toast-like flavors from the maderisation process, all wrapped up in the oakiness of a Tawny Port. If you can't find Sercial Madeira, a dry white port left to bake in your trunk on a summer's day should have a similar taste.

Actually since crab and lobster were considered poor food, they may well have made something like this for orphanages. They used lobsters to feed prisoners.

Tin crab or tuna was what was usually left over to eat growing up. I literally used to make stew crab or stew tuna with tomatos or just toast on the side. Although id never make it today, its a humbling memory I hold still to this day.
