I would serve my tongue on a salad with a raspberry vinaigrette and some aceto balsamico and on the side a steak tartar (from black angus) with some Tabasco, high end oil, peper, salt, and a -20 degree celsius cured egg yolk with some tomatogel and dried Serrano Reserva.
