Roasted Chicken * Whole chicken (3-5 lbs) * Olive oil * Salt * Pepper * Lemon (optional) * Garlic cloves (optional) * Fresh herbs (optional: thyme, rosemary, parsley) 1. **Prep the chicken:** Take the chicken out of the refrigerator 30 minutes before cooking to bring it to room temperature. Remove any giblets from the cavity and pat the chicken dry with paper towels. 2. **Preheat the oven:** Aim for a temperature between 425°F (220°C) and 450°F (230°C). 3. **Season the chicken:** Rub the chicken generously with olive oil. Season liberally with salt and pepper on both the inside and outside of the cavity. 4. **Flavor boosters (optional):** Here's where you can add some extra taste! * Stuff the cavity with lemon wedges, garlic cloves, and fresh herbs like thyme, rosemary, or parsley. * You can also create a herb butter by mixing softened butter with minced garlic and chopped herbs, then rubbing it under the skin of the chicken breast for extra flavor and moisture. 5. **Truss the chicken (optional):** This step helps the chicken cook evenly. You can tie the legs together with kitchen twine and tuck the wing tips underneath the body. 6. **Roast the chicken:** Place the chicken in a roasting pan. If using vegetables like onions, carrots, or potatoes, toss them with olive oil and season with salt and pepper before placing them around the chicken in the pan. 7. **Basting (optional):** Basting adds moisture and helps crisp up the skin. Every 30 minutes or so, you can spoon the pan drippings over the chicken. 8. **Cooking time:** The roasting time will vary depending on the size of your chicken. A general guideline is 1.5 hours for a 4-pound chicken. To check for doneness, insert a meat thermometer into the thickest part of the thigh. The internal temperature should reach 165°F (74°C). The juices should also run clear when the thigh is pierced with a knife. 9. **Resting:** Once the chicken is cooked, take it out of the oven and tent it with aluminum foil for 15-20 minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful chicken. 10. **Carving and serving:** Carve the chicken and serve it with the roasted vegetables (if used) and your favorite sides.

I saw this movie in theaters when I was a brain dead 3-year-old and even back then I hated it, whenever my parents would put these movies on for me I would always become disappointed if this one came on and I would just go do something else. To this day I'm still an avid fan of the Alvin franchise, but I after the second film (which I personally think is the best) I stop.
