You don't wash mushrooms cause mushrooms soak in the water pretty fast. This ends up in you pan/pot as liquid and most recipies would be fked up just cause the mushroom were washed. Take a brush, brush them off, cut the end of the stems and you're good to go!

If you don't wash them properly, you risk exposure to E. coli or parasites. To ensure they're safe to eat, rinse the mushrooms thoroughly and then dry them before use. Your suppose to actually wash them in salt water, per federal food safety regulations. You obviously don't cook them until they are dry and its the mushroom gills that retain the water.

Sure they are cultivated in manure but you do know they grow out of it and when harvested, they get a clean cut at the stem without getting im contact with the manure ever again. And wtf are you talking about E Coli. You're supposed to cook them anyways, which would kill all remaining germs. But even if eaten raw, mushrooms are nowadays mostly cultivated in soil/clay based manure. You can cut mushrooms directly from their soil, rinse of the dirt and eat them. You won't get sick... You know that food safety regulations at least here in Europe, would take all mushrooms out of their shelves if contaminated with EColi? No store would be able to sell them... I would rather peel my mushrooms before washing them. And before you go again with "you wash your mushrooms" look it up on Google, look how real chefs do it, then come back...

4:30 yep, in her defense it's not uncommon to have it thicken this much at the start, this is a rue, cooking it like that as a paste removes the flour taste via caramelization. Similar thing with gravy and stews, though it'd be highly irregular to keep the veg in during this step, it's usually it's only butter and flour in the pan at this point, removing things from the pan after searing and rendering any fat. She also doesn't cook it long enough, the four/fat combo would add to the "fond" on the bottom, Browning and developing flavor until you add broth to the hot pan "de-glazing" via rapid boiling as the caramelized flour mixture absorbs liquid and seperates from the pan (which is also why wine is often used, alcohol boils more rapidly). This way would be the worst way, sticking to the veg, still tasting like flour, and not developing any new flavors (as well as portion problems to get the final "soup" thin enough). 😅 Would actually be more effective to skip and just add cornstarch later, even if that's less flavor than the real method, it's a lot harder to mess up if you don't know what you're doing.

Sorry to hear that. I've lost 2 pets (1 dog 1 cat) to being run over, and my last cat just disappeared one day to never be seen again. It took at least a year to get over that last one that just vanished. It's never easy to lose a furbaby.

She wasn't that far off really. She messed up a bit in the prep work. She should have washed the mushrooms, patted them dry with a towel or paper towel, spread them out in direct sunlight (this makes Vitamin D) for 30 minutes or so. Then rough chop them, put in a pan with oil/butter/margarine add salt, let the mushrooms sweat a bit, then add in onions, wait about 3 minutes and add in garlic cooking on about medium high heat. After about 2 minutes or longer depending on how cooked you like your onions, remove the mushrooms/onions/garlic from the pan to a plate. Using the remaining oil in the pan add in some flour on low heat for the small pot she was using around 2 tablespoons of flour. Cook the roux on medium low for about 4 to 5 minutes or until it looks cooked. Then add "COLD" stock or milk/cream/water and mix thoroughly, bringing the heat up to med high, mixing constantly until it thickens to the desired consistency and seasoned (salt/pepper) to your liking, turn off the heat and add in the reserved mushrooms, onions, garlic, juices and continue mixing for about 2 minutes. Remove the pot and place on a cool surface and serve.

I've got a bit of a soft spot for Kay. Something about an apparently gentle and mild-mannered, middle-aged woman from the UK with a nearly incomprehensible accent, an Iron Maiden t-shirt, and an idiosyncratic style of do-it-yourself cooking just sort of ticks all the oddest boxes for me. Not that I'd eat that cooking, mind you, but I can't help thinking that a couple beers and an episode of Monty Python or two for an ice-breaker, and Kay would probably tell you the funniest damned stories you've ever heard.... Jack, on the other hand, of the infamous green-meat chili incident, just sort of makes me want to throw punches around, and I'm not the sort of person that ever feels like throwing punches....
