www.barepantrys... Belizean fudge has nothing to do with chocolate. Nevertheless, this candy is a divine confection. My mom Rosalee has perfected this recipe over the past 40 years. When you eat a piece of this sweet treat you will feel like you are in heaven. Be sure to give some to your Valentine.

Thank you so much for sharing this. This is perfect and just the way I remember it from spending a lot of time in Belize growing up. Such a great memory. I added ginger and coconut to mine.

@bobbyyezzur24..Mommy must be getting soft in her old age, because she wanted me to remind the everyone (1) you must use a really thick pot (2) don't put too much butter in the fudge or it'll come out too soft (3) grease the baking sheet lightly because too much butter will make the fudge too soft (4) remember to keep scraping the sides of the pot because the outside won't cook good, and then it'll soften the fudge again. She was so tired from chemo that day, but you made her smile today. :)

Hi! I rarely ever comment on KZbin videos but I just wanted to say thank you for all your amazing recipes! My mom is from Orange Walk and my Dad is from Dangriga. I grew up with so many of these dishes cooked in my home but bless my mom's heart she doesn't have the patience to teach and would always say "just cook it till it's nice :)" lol. The Bare Pantry Show has allowed me to cook like a true Belizean and even my Mom is proud of my efforts! My husband and I are currently in Okinawa Japan as he serves a tour of duty with the Marine Corps. These recipes are my own slice of home when I am SO far from home. Thank you.

Yes I must get one of these thick pots. I think many of our dishes come out so well when we have this type of pot. I am so glad I came across your channel because I want to be able for my children to enjoy the dishes I did growing up. I am glad to hear that your mother is doing well. God Bless.

I learn something new here ,because I learn from my mom to put just the sugar and milk in no water and keep stirring. Got to try this with the water ,maybe thats easier because the sugar will melt quicker .

Hi Destiny, God granted my mom a miracle twice. She just went through another scare with a nodule found in her left lung. Through prayer and supplication it turned out to be nothing but scar tissue from one of her life saving surgeries of the past. What's your daughter's name so we can lift her up in prayer. All is well my love.

Hi rdc197810...Normally she is very boisterous, but on this day she was suffering the effects of chemo. She insisted on teaching me the fudge as she thought there was a possibility she could take the recipe to her grave. Thankfully, she beat stage 4 uterine cancer on June 18th 2012 and is back to her old self again.

Thanks so much for your quick response. That's good to know, even if it gets sugary/grainy that's ok. Traditional Bosnian coffee, they don't put sugar (or milk) in the coffee, but will nibble on a sugar cube or in this case Belizean fudge, while they drink the coffee black. Funny how cultures so far apart can have certain things in common. Pity we still have so much of the first batch left cause I'd like to try your mom's recipe. Oh well, next time.

Hi bzbeauty, these are like Twinkies, they never die. :) Truly though, the most that will happen to them is that they will become sugary/grainy, but they will last forever.

Hi babykay0502, remember that your pot has to be thick okay. My mom was in the middle of fighting for her life when we did this video. Now, thank God, she's cancer free. I'll have to invite her to teach us how to make rice pudding soon. My older brother and I use to have to sell fudge at All Saints school to raise money so I could win popularity contest. I would always win. Mom's fudge was the best.

I'm married to a Bosnian man and discovered at a restaurant in Bosnia they served this (just the fudge itself without nuts) with their coffee. So I made a batch of these for my husband to have with his coffee. Naturally, I over cooked it. Pity I didn't see this video earlier. But anyway, it's just 2 of us and it's really sweet without the nuts, so he only has it with his coffee. So my question is, how long can these things survive before they go bad?

@ladymac123...you made me laugh in the middle of a long day at work. Tomorrow morning I'm putting up enchilades. Tart is coming soon too. I have another one of mom's delicious recipe. It's for bread pudding. I was waiting for my mom to take her last chemo before I do that one as a celebration for her. She says we may have to do it sooner because her appetite is still good..praise God!

Good Morning Shundakm. I'll go to Walmart later and tell you the name of the pot ok. Isn't August the greatest month to born in? Lol I say that because my birthday is August 14th. My grand aunt who taught me the bread recipes, birthday was Aug 9th. She's been passed on since 2004 though, at age 98 no less.

I'm in heaven when I have fudge in my hand. Everyone who knows me--knows I love fudge. Finally I found the secret--(when to take it off)--that's why my fudge is always stretchy or cracky--LOL. I'm ordering your book straight away.

Thanks so much for making this video! I have been using it every year for the past few years to make this as a dessert for my family but my success rate is about 50%. A lot of the time I end up taking it out to early and it finishes with a smooth gooey/sticky texture as opposed to the hardened grainy texture that it should have. I was wondering how I may avoid this in the future. Should I just let it sit longer on the stove or could it have to do with the cooking temperature? How long do you stir the ingredients in this video after adding the butter and vanilla?
