What you've made here is deep-fried mozzarella chunks. Which is great, but it's not cheese curds. Cheese curds are not made from cheese; it's the other way around: Cheese is made from cheese curds, via a process that varies considerably depending on what kind of cheese you want to make, but generally involves aging. (Mozzarella is not aged as much as cheddar, and also does not have annatto in it, among other differences; but the curds start out pretty much the same.)

You can make fried Cheese curds from Cheddar cheese curds or any other cheese curds you want! Cheese Curds are simply the curds before further pressing or letting additional way out of the curd and any other steps before it becomes the intended cheese. So there are many differences in cheese curds depending on the final cheese you are making as there are different cultures and ingredients added to the milk, different ripening times, and different sizes the curds are cut into before cooking, different heat and heating times to cook the cut curds. So depending on the cheese that the curds are to be made into will give them a much different texture, acidity, and flavor. I have made cheese for over 30 years and have made fried curds form many different kinds of cheese curds. Some there is little difference, some there is a great deal of difference in taste and texture. Aging is only one of the last steps in making different cheeses, there is a great deal that goes into making a cheese that happens before that!

Hey Vicki, where did you find that recipe? What you made was deep fried pieces of mozzarella cheese. "Cheese curds" are an actual thing. They aren't just hunks of cheese. Actual "cheese curds" are the youngest form of the cheese making process and are usually cheddar (if you were intending to make like an authentic Wisconsin cheese curd). "Cheese curds" are famous for the squeak when you bite them.

I noticed that she thanked someone for the American recipe???? I love Miss Vicki but I'm kinda finding things baffling as well. Americans would of used a curd. But she even said she chose mozzerella cheese (not a curd) over Cheddar (closer but chose not to) and made a fish batter! I can't say the word baffled enough!!!! We see this in every video. They say it's American but follow nothing that makes it American!! She even admits to changing things! That to would be fine but they need to stop labeling things "American"! The issue is the labeling of the videos as American or Authentic American. Which they are not American or Authentic American. If I made a video saying that I was going to make Authentic British tea, and then poured a can of Coke in to a glass and said "there you go, that is Authentic British tea". British people would tell me that I was wrong. Which they should do if I simply poured a glass of Coke and mislabeled the video as something that it wasn't. But a lot of Americans keep telling Vicki (in the comments)that there is no wrong way to make anything American, which, of course, is wrong. And those comments are not helping Vicki learn (if that's what she actually wants to do).

I think you’re going to get lots of comments from using cheese instead of cheese curds. It’s tasty but completely different. Fresh curds are more acidic and they don’t melt. They’re chewy and squeeky. If you’re frying cheese, it’s usually frozen first so it doesn’t melt

Those look like great cheese balls! To make fried cheese curds you really need to start with real cheese curds. They're apparently hard to get your hands on in the UK, but they're so good. Fresh ones squeak when you bite them.

I found cheese curds in ALDI on Long Island. They had white cheddar and orange cheddar. I bought the white and ate them plain. I had heard it's best to let them get room temperature. They were okay. Next time I'll make a batter and fry them.

Looks good, but those are mozzarella balls, not cheese curds. Cheese curds are fresh, bite-sized bits of unaged cheese that form during the cheese-making process. They are about the same firmness and density as cheese, but with a springy or rubbery texture. They are very popular battered and deep-fried in Wisconsin and Minnesota. In Canada, they are used in poutine. 🧀🧀

As already noted, you are making fried mozzerella cheese. They are often made in sticks but the chunks look good. They are served with marinara sauce. Cheese curds are a different food stuff alltogether.

I think you likely got confused to what cheese curds are. Cheese curds are young pieces of cheese before being pressed into blocks. They have a different flavor profile and different texture than regular cheese. What you did is you made deep fried mozzarella sticks, or in your case cubes. I think it would be difficult for you to made actual cheese curds from scratch.

The solids are the cheese curds and the liquids are they whey. The cheese curds are then processed more and squeezed together to make the various cheeses. This is just a basic of the process, but it's pretty much the same for most if not all cheese (not a cheese maker, so only general knowledge here). But cheese sticks are awesome! Especially with some marinara or ranch dipping sauce.

I had some cheese curds at the Tillamook Creamery on the Oregon coast, and it’s pretty much a light and airy unformed cheese ball. It reminded me of remnants leftover after pressing cheese into a block before it’s aged. They sold them in snack bags there on-site. Totally recommend trying it if you’re in town!

Greetings from California! I had to mail-order cheese curds from Canada when trying to make Poutine when it wasn't really known in the United States. The fried cheese curds at Freddy's Steakburgers are pretty good, but the breading could be more thicker and crispier. They're best when piping hot when the cheese is still melted. They're not as good when they cool down and become "sqeaky" again.

Cheese curds are known in the US and have always available (I remember eating Tillamook cheese curds as a kid). You generally have to go to more bougie grocery stores to get them in lots of areas/cities. I’m sure you can get them at Whole Foods.

I can recommend a small "fryer" with a basket, at least! It will also make Corn Dogs real easy. I'd also recommend Cheese Curds in a different batter. Try an American style batter, instead of Fish-N-Chips batter. Different batter for Fried Ravioli, not Fish and Chips batter. You want a batter that stays with the curd more, rather than just puffing up and running everywhere like that batter did....if you are trying to recreate an American Fried Cheese Curd, which I think you are.

Cut mozzarella into strips and a breaded batter, deep fry or bake. Now dip in marinara sauce and you have mozzarella sticks. What you made was close to those, I love mozzarella sticks, and what you made looks yummy to me, just needed marinara with mozzarella. Not sure those would be considered cheese curds. Definitely loved watching.

Suggestion… American goulash. I use the recipe from Chef John. It very different from Hungarian goulash, but is also yummy. It’s a favourite in our house and a one pot meal. I ate cheese curds as a snack when I worked in Minnesota. They are plain and certain type of cheese, rarely deep fried. I assume you mean mozzarella cheese that melts. Then they are called Cheese sticks or cheese balls - not curds.

Like everyone else has told you what you've made is a version of batter fried mozzarella. I've not seen it with the batter you used. Usually fried mozzarella is made with a crumb coating, but I'm sure yours are delicious. Cheese curds or squeakers are very different & very good if you like cheese.

Sorry I haven’t been keeping up with the cooking videos. There’s lots of stuff happening in our country right now, it’s hard to turn away. That said, I love fried mozzarella. Try making corn bread next. Then maybe banana pudding? You can try Texas chili! The chilies or chili powder can be mailed because they aren’t too perishable.
