The song is quite sad, it tells a story of loss and death, the last part you said that sounded like a poem is indeed a man dictating his will before dying... most flamenco songs have those intense lyrics and themes, so it all makes sense with the way it is sung, crying your lungs out... Rosalía has a very sweet tone of voice compared to many flamenco singers and she also comes from a part of Spain where flamenco is not that common, that's why some flamenco purists criticize her (she's been even accused of cultural appropiation) but most of the people recognize her talent and the respectful way she has always behaved to flamenco since she has studied half her life with very famous flamenco masters, her album "El mal querer" is indeed her end of music degree project. It is true that she has abandoned a little bit this flamenco side of her with the latin rhythms, I hope she was brave enough to sing a song like this Catalina in the Grammys award ceremony, for example. Would that audience be prepared for such a slap of ART in the face?! Haha Nice reaction BTW, sometimes feelings in music reach people's hearts even in a language you don't understand...

This performance is in front of one of the artist Pablo Picasso's best known work, a 1937 oil painting called Guernica, considered one of the most moving anti-war paintings in history. Guernica is a town in northern Spain that was bombed by the Nazi aviation in support of the Spanish fascists. This painting represent a very sad part of our history and has become an anti-fascist symbol. If you are liking this I recommend you "pequeño vals vienés" by Silvia Pérez Cruz with Raul Fernandez. I like her voice even more than rosalia's. "Take this waltz" by Leonard Cohen is an English version of this awesome poem.
