The sweet martabak is a common misnomer by Indonesians, it's originally called "Kue Terang Bulan" (Bright Moon Cake) back then. Since many food stalls sold both Martabak & Terang Bulan, more and more people started to refer the cuisine as Martabak telur / asin & Martabak manis for convenience. Both cuisines have totally different roots / origins.

Part 03 - Sweet Martabak? Not all Indonesians agree that this should be the name for this food. In other areas, people would use other terms such as: - Terang Bulan/Kue Terang Bulan ('Moonlight Cake') - in Bandung, West Java - Hok Lo Pan (Chinese term) - in Bangka island, Sumatera - Martabak Bangka (Bangka is a name of Island in Sumatera) - Kue Bandung (Bandung Cake) - in Semarang, Central Java (strangely not in Bandung itself :D) - Apam Pinang - Pontianak city, West Kalimantan Aside from these local names, some people may choose to agree to use them based on personal preference, family background, or just to appear somewhat edgy against prevailing cultural establishments lol. I have a friend from East Java who staunchly supports the use of Terang Bulan to refer to Sweet Martabak, like how Italians object to pineapple being put on pizzas lol. But sometimes it's not just the names that are different, but also ingredients. Apam Pinang for example, does not have an extensive selection of toppings like the common sweet martabak, despite its looks. Malaysians also have something similar to our Martabak Manis, called Apam Balik.

not all indonesian may agree is not a problem, since everyone got their own local language. edit: what's more important is on KBBI there is word martabak and it's explaining that there are two type of it manis which is sweet and telur which is the savory. If you wanna disagree on national language to compare to local language I don't mind but yeah like what @erlangwind said "cuma berbagi wawasan aja"

I myself am a user of 'Martabak Manis' term, although I always try to avoid debating with people who insist that it's 'terang bulan' by accepting that term only during our conversation about martabak. lol. edit: in case people misunderstood my post title "sweet martabak?" as if I'm the one questioning the term. I'm not. It's just a chapter title to invoke people's curiosity.

Part 02 - Other regions, other variations When you go to other parts of Indonesia, or in some places in major cities like Jakarta, you can find other varieties of Martabak, especially the savory one. Here I'm just going to give two examples of savory martabak variations from outside of Java: Martabak Kubang and Martabak Aceh. Martabak Kubang hails from the regency of Lima Puluh Kota (translates as 'fifty towns') in West Sumatra province, and is also known as Martabak Mesir (Egyptian Martabak) despite having no connections with Egypt itself :D. It was first introduced to the region by Arab and Indian traders, which the local later mistook as Egyptians, somehow. It uses different herbs for ingredients that gives it a more curry-like flavor, and the dipping sauce uses slices of onion, bird's eye chili, and tomatoes. Martabak Aceh hails from our westernmost province of Aceh. Its most notable and unique feature is that the egg wraps the martabak instead of being inside the martabak, and instead of a dipping sauce, it is eaten with curry. Plus, you can order an Aceh martabak without any meat, or you can have meat in your dipping curry. Compared to the savory martabak you find in Java, Martabak Aceh's looks should remind you of an omelette.

The savory martabak consist of duck eggs, lots of scallion/green onion (not pandan leaf like you mentioned), curry seasoned ground beef and martabak skin. But now days to keep the price down since beef and duck egg are cost more so they replaced it with chicken eggs and ground chicken.

All foreigners who's trying the sweet martabak, the first word is always: WOW!!! Mixing a chocolate & cheese is not command in the western world. But in Indonesia the martabak manis and a grilled banana is so delicious with chocolate sprinkle & cheese mixed together. But remember, always use *a cheddar cheese!* That's the secret.

The pancake Its call Terang Bulan, kue Bulan. Martabak Manis used in westJava and Jakarta only. Martabak is fried dish with meat and egg inside, Terang bulan is pancake dough fried with butter.

Just watch your video. Actually the savory comes from the duck egg. Martabak telur daging ayam means martabak filling with egg and chicken. Usually you can choose whether chicken or duck egg for the filling

Given that you seem to like Martabak very much, I can't help but to share some explanations and suggestions. This is going to be lengthy, so I'll break it to three parts. Part 01 - Modern vs Traditional Actually establishments like Martabakku are modern versions of Martabak vendors in Indonesia. Oldskool vendors are mostly those in hawker carts or in hole-in-wall kind of shops with signs of aging all over. However, apart from these visual and physical differences, there are other distinct characteristics of the old, more traditional ones: 1. Selection of sizes for savory martabak: Martabakku follows a template which is also adopted by other latest-modern Martabak outlets: all the savory martabak are of one size. In more traditional ones, you can choose from 4 different sizes based on the amount of eggs used: biasa (regular - 2 eggs), spesial (3 eggs), super (4 eggs), and istimewa (5 eggs, and mind you, English translation-wise, both spesial and istimewa means special, lol). 2. Selection of eggs for savory martabak: Again, establishments like Martabakku usually only use chicken eggs. Traditional vendors on the other hand, provides you with an option of using either chicken or duck eggs, with the latter being the preferred one. It's a matter of preference, but I think duck eggs boosts the flavor even more if you use beef as the meat, which comes down to the third difference.... 3. Selection of meat for savory martabak: Traditional martabak sellers, especially in Jakarta and other major cities in Indonesia, (especially in Java and Bali and some places in Sumatra too), prefer to use beef rather than providing various selection of toppings for savory martabak. Places like martabakku would give you alternatives such as chicken, tuna, and lamb. 4. Sweet martabak options: traditional martabak sellers normally would not have more contemporary options like red velvet, cream cheese, and oreo for instance, although it seems that many have begun to do so over the years, whilst not changing the way the serve the savory one. Your option would only be (cheddar) cheese + (condensed) milk as base with additional toppings such as choco sprinkles and crushed peanuts. 5. There are also some traditional snack sellers on cart that sell sweet martabak as one of their items, but they don't sell savory martabak. The sweet martabak they sell also don't use cheese, and their toppings are also quite different. Apart from chocolate and peanuts, they also sell sweet martabak with shredded coconut, black glutinous rice, and sweet corns as topping. This type of martabak is usually much lighter in taste and also far cheaper. 6. Dine in vs take away: normally traditional martabak sellers only serve take aways, they usually don't have a place for dine in and the available seating is only for waiting customers. You can certainly try eating martabak there, but you'll be served as if you're getting a take away and then you can just sit at one of the plastic benches, put the martabak box on your lap, and bon appetit. You'd be having a hard time opening the dipping sauce bag, let alone dipping the martabak in it tho. lol. Try the roadside martabak once in a while, look for either "Martabak Top Bandung" or "Martabak Bangka" sign on hawker carts. They usually open in the evening. It'll be a different experience.

The green stuff in that Martabak Telur (Savory Martabak) is actually a green onion. So it is not a pandan leaf.

When u eat "martabak telur" will be tastier when u eat with "acar". Acar is the thing that u look at that small bowl that made of mix cucumber& green chilli (cabe in bahasa). Eat with acar much better than smthing u called soya sweet. Thanks for coming in indonesia.

I once heard a white female KZbinr from Europe who married an Indonesian and lives here said that people from western culture think that the combination of chocolate and cheese is a very strange combination. So that the mixture of cheese with chocolate never existed in their pastry or bakery. That's why she found it strange when she saw Indonesians eating a cake filled with chocolate mixed with cheese. She said there was no history for Europeans like her to eat chocolate with cheese. But the funny thing is that after the European KZbinr tried the martabak cake with chocolate and cheese filling for the first time, she said that it was a strange experience but also delicious at the same time. And after that she tried various cakes with a mixture of chocolate and cheese and began to enjoy them. And when she returned to her country she had a funny thing when she saw her family and friends looking at him strangely for eating a cake filled with chocolate and cheese. After looking at 8:22 it seems that people from western culture think that chocolate mixed with cheese is a strange combination turns out to be true.

how to pronounce: telur = teloor = egg ... daging = daageeng = meat ... martabak telur or egg martabak is made from: wheat flour, salt, chopped meat, garlic, spring onions, pepper, onions and several other spices ... pandan is not included. There are pickles on the table near the martabak manis which are delicious when eaten with martabak telur.

Try nasi padang please,specially rendang and dendeng.. And come to west sumatra,,the originally rendang come from. Many beautiful place in west sumatra,,beach,mountain,lake,waterfall,rice terrace and amazing food in west sumatra
