I'm planning a holiday there in January from the 20th - 24th potentially and I was wondering if the N class would still be running on there by then as my hope is to travel on it for the final time before it gets retired

They should still be running to Warrnambool by then unless things change. They'll only run on the morning trains from Warrnambool to Melbourne and the late afternoon/evening trains from Melbourne to Warrnambool.

@ThebusofdoomFSX yeah doesn't sound great for the times I'll be taking but I'll try to get near the station to at least watch it depart. I went on it like 8 years ago and really liked the first class seating
