What I really love about Civ VI is that I've played over a thousand hours, but haven't even come close to mastering how to play as all the different civs. Can make any of them work, sure. Would bet on myself being able to win as any civ on at least immortal, sure. But able to use each civ's unique features to their fullest? Not even close. Until I saw this exact video, I'd had Byzantium filed under "Figure out how to play as these guys at some later date".

Victory type difficulty is more based on map and situation to me than just being able to say one is harder than another. That said, getting a diplomatic victory on deity requires strong production (for mahabodhi temple, potala palace, and Statue of Liberty), strong science to even have the opportunity to build them, and strong of both to get the late game tech/civic for free diplo points. All that though, you still gotta get 11 points through emergencies and voting by the point you’ve got those free points, and someone usually has a spaceship in the air by then. Dom is usually the easiest option in my opinion, as it’s generally extremely flexible, once you’ve learned the game’s combat system, you’ll be able to recreate a domination victory in most games, and you get exponentially stronger as you take more and more from your enemies.
