I lived in Kent for many years and loved going down to the Village Dockside Villages as well as to Cornwall with my boys. Being from Durban, South Africa and fished all my life but for different fish etc. The best is when, after watching the seafood being caught, is when the catch is brought to Jim to cook, he is excellent, such knowledge as he explains what he is doing.

On the continent velvet swimming crabs are a highly prized delicacy. That meal looked fantastic, only downside for us poor mortals who can't get their own lobsters is the cost. Nice to see everyone together.

I really like how Sir Jim gives us a base recipe that can be used for multiple dishes! Sir Jim, I used your base rue recipe to make dinner tonight!!! I did a ham/potato/corn/carrot chowder...and it was delicious! Thank you Sir! I really enjoyed this episode, as I've heard of bisque (?sp) but didn't know the first thing about it. You two described the smell so well, I knew just what you were saying! Thank you all for another great video adventure. Jim using a parring knife to parry lol. ALWAYS use a good white wine when cooking, so you enjoy yourself a glass while cooking. Also bisque looks lovely. I personally would have added a little cream or half and half. Always lovely to see you sharing your dishes with us Jim, Cheers.

Love the boat and crab pots. Its was very different following into the kitchen and seeing a meal be made, thanks for posting i love lobster. When we visit the coast in our camper van i try and forage for sea food. We are hoping to get successful this year lol. We managed muscles from Newquay last year they where lovely in garlic butter. My stepfather uses Argentina shrimp to stretch the lobser bisque as they have the same meaty texture and similar flavors to lobster. Great video, thank you!

Spargo's Kitchen is a joy. Are all male Spargo's Good Cooks? Years ago I paid a visit to the late Thomas Spargo of Sancreed. He opened the door in a floral Pinafore and I followed him back to his kitchen where he was baking Pasties. He had the same genial disposition and loved to talk about anything, he insisted on reading a Poem about Sancreed and it's cawing Rooks. So I say Viva the Spargo and your Kitchen! I was reading a book on the Seashore published in 1947 by L R.Brightwell while he was talking about the Dahlia Anenome he mentioned that in France it was fried and when he tried some it reminded him of Lobster. I have never tried this myself, and always say to myself I must.

I heard that lobsters were once "poor" people's food, and now, cooked well, are lovely! I am so happy to see a good way of making lobster bisque. The last time my sous Chef tried it, he destroyed the food processor because the shells were too hard HAHA! Well, at least it wasn't on my dime!

That lobster bisque looks gorgeous! I think I'd want to just sit with the pan and a big spoon by myself in a corner. I don't tend to make soups very often because my other half won't eat them, so I end up putting most of what I make into the freezer, but you really can't go wrong with a big bowl of home-made soup and crusty buttered bread (or lobster bites). Looks like you missed all the bad snow in your neck of the woods too, you lucky people!
