I have been recently diagnosed with high cholesterol and bought myself a blackstone griddle to try my hand on some more healthy meals for myself. The majority of the recipes you share may not be low cholesterol (still sinfully mouthwatering), but I still learn how to tame a griddle while enjoying the food through your reactions. This a perfect situation to use an outdoor griddle. If anyone wanted to make this super delicious sandwich and bacon jam indoors, it would heat up the house and make the a/c work harder. Would recommend a string of water misters on the perimeter of the porch to mitigate the scorching weather.

Add a fan to your deck, makes the world of difference. I put an outdoor fan on mine, mounted it on the wall. Swivels so the air doesn’t mess with your fire.

The best thing about using a flat top in east Tennessee in this weather… You just have to set it out in the sun. No LP gas required. Out west, Blackstone is going to make a killing when they have to replace all the grills that melted this summer.

I came into this video a little on the skeptical side, and then I watched it. Holy s*** now I need to make this! The bacon/onion/bourbon jam looks epic and the end results are amazing with the balances of savory, sweet, and sour. Well I know what I'm making soon! Just wish I could trap bacon fat on my Evo :( Might need to cook the bacon in a cast iron skillet on top of it and portion out the fat to the chicken. I'll figure it out.

@@TheFlatTopKing Yes sir. It's probably 1/2 inch higher in the middle than the edges. It's 30" in diameter, so figure it loses 1/2 of elevation over 15" of length. The drippings land in the stainless drip tray which runs around it. The entire unit is probably 36" in diameter with the drip trays being about 6" in width. So cleanly trapping the bacon fat would be difficult, so I'll probably just do the bacon in cast iron to retain the fat. The Evo makes the best bacon you've ever tasted because the fat doesn't pool under it like it does normally. I can't describe it, so you'll need to visit me :) It's HOT, but at least we don't have your humidity!

Neal and Amy, do you deliver to Maine? I've been doing carpentry and general property maintenance for 48 years, so I think my concern is valid and qualified. I have replaced vinyl siding on houses more times than I can count because people had their grills and griddles to close to the siding and the siding melted. Most insurance companies don't want a grill on a wooden deck at all and 20' away from the building. I'm not going to make a recommendation on distance from combustibles for obvious reasons, but I keep mine at least 10' away. I don't want to have to miss your great videos because of melted siding or worse, Things can happen in seconds.

My wife made chicken on the grill using Shake That, and I did a rotisserie of Tri Tip on the Weber using Smash That. my wife said both of the cooks tasted better than we have ever done. That looks good but, can we really call it BBQ if there is no fire? I was my understanding that to be BBQ it had to cook with wood fire, be it a stick burner, pellets, charcoal its all wood burning? Not being a smart ass trying sharp shoot you just curious from someone who is a much better cook than I.
