Matt's Show Notes: 1. We dredge exactly the same way, right down to a certain hot sauce in the egg. 2. Season your meat! 3. Shallow frying for the win! Deep frying traps steam, and pushes that beautiful crust off. Shallow frying allows the steam to escape, and gives that perfect GBD crust you got! 4. Nothing better than a quick pan gravy. 5. It's 0300, and I'm eating a bowl of pulled pork 😂 Excellent work as always!

I see a box of Diamond Crystal there, I know I've mentioned it a shit load of times so I'm tempted to claim credit 😂 I've been using pre-packaged rubs less and less these days, and just seasoning with whatever I want in layers... mostly because I got a Pepper Cannon and feel like freshly cracked pepper absolutely makes a difference over pepper that's been in a rub for a long time, and I've found I don't have to worry about rubs clumping when I'm not using them.
