Hi, just a quick message from a native Jamaican; Ackee and saltfish is Jamaica's national dish due to its rich historical, cultural, and culinary significance. Ackee, originally from West Africa, was brought to Jamaica in the 18th century. Saltfish, or salted cod, was introduced by European traders. The combination of these ingredients reflects the fusion of African, European, and indigenous influences that characterize Jamaican cuisine. The dish is beloved for its unique and flavorful blend, often accompanied by staples like dumplings, breadfruit, and fried plantains. It symbolizes the island's history, resilience, and the creative ways Jamaicans have adapted and integrated diverse culinary traditions into their own. And personally it's my favorite and I would eat it everyday, so it belongs in S tier.

As a Jamaican who used to live in Texas, the ONLY place my family was able to buy oxtail was in the little Mexican stores that sold native items from Mexico. When my Mom and I went in there, we used our muy pequeno knowledge of Spanish to describe what we wanted. It was such a wholesome moment because people in the store thought we were lost but when we picked up items and the oxtail to use in our cooking, we became family. So when you say Jamaicans and Mexicans have a lot in common, I felt that!

Guys if you can, go to Jamaica in December and experience the authentic preparation of all those dishes especially the Fruit Cake & and Sorrel drink which is usually a must at Christmas. I would have served you as a first timer our Roasted Breadfruit, Johnny Cake(fried dumplings) and fried plantains with the Ackee & Saltfish. If you are lucky and Avocado is in season get a couple slices and then you'll see why Ackee & Saltfish is our National Dish! The Festival that you tried goes better with some Fried Snapper, Parrot fish, or Sprat. Pro Tip: Don't eat our Traditional Christmas Fruit cake & drink the Sorrel until you're home for the evening, or have a designated driver, because a generous amount of Wray & Nephew white Rum, Stones Ginger Wine and Red Label Wine will be in that cake and Wray will definitely be added to the Sorrel, you'll need a nap. Thank you for featuring some popular dishes from my Beloved Jamaica. Respect & One Love!

Im always curious how sorrel reached mexico to become agua de jamaica. Rice and peas originally used gungo peas or whats commonly known as pigeon peas. Then it went to kidney beans. Black cake can have frosting also and used for special occasions. Next time you get rice and peas ask for gravy on the rice from the oxtail!!!!!! Extra gravy i promise you ud love it. Also more curry on the rice and peas for that dish.

Thanks for enjoying our Jamaican food. FYI - What you had with the jerk chicken was not festival but fried dumpling. Jamaicans when cooking fried dumpling, usually make it either round or twisted, festival is usually long with a slightly sweeter flavor & slightly darker in colour. We love our oxtail, but the meat is expensive, ackee and saltfish is not only eaten with boiled dumpling but other boiled food like pumpkin, yam, banana & irish potato. At times the side or main could be calloo/aka greens, that combo works and is for those who want to eat full veg. You should try our jerk pork its out of this world - one of the reasons why its called jerked is because its usually cooked over coal & on pimento wood. One of our lesser known food is cow foot, if you have the opportunity - try it. You cannot mess up cooking fried plantain - its one of the easiest to cook as its a ripe plantain fried as is, however you should try plantain tart which is its dessert version. Try our other desserts in the future - rock cake, gizzada, puddings. Just like our country we have a flavorful variety.
