Steve Graf shows you how to bone out a deer, the venison processing way. Muscle groups are dissected without cutting across the muscle themselves. The footage is taken from The Graf Boys dvd - Hunting for a Living - 1997. New footage, and historic stuff like this, are loaded on to the tvwild.co.nz website, weekly.

I NEVER comment on any youtube videos...I felt so compelled to comment on this that I just had to. This is the best, most informative video I have ever seen on here. Someone that's not lazy, and actually understands the geometry and mechanics of how an living animal works when butchering. It's what I strive for as well. Well done! I see too much waste because people can't be bothered to understand anatomy. Easier for them to hack out choice cuts and throw the rest away. It should be a point of pride for any hunter to be able to say they respected the life they took and harvested to the best of their ability.

This is the BEST video on quartering a game animal ever! 13 minutes and you're done... without wasting anything. I'll watch this one again and again... and I did order one of those knives... : )

Best video ever of skinning and boning a deer.Great job. Sharp little knife you have there. I must get one of those. I use to cut meat for a living for 25 yrs. and this was very helpful. You have a great talent. Most people don't know that "cutting meat" is an ART. Thank you.

A true clinic on how to skin and bone a deer. I wish I had your skill (and your knife.) We prep our deer in a similar way when It is a long "drag" to get them out of the back-country. What we do afterwards is to lace up the hide (like an American football, ) with a length of rope, attach a swivel like you would use on a dog leash, attach a pulling rope and drag the meat out that way. The bundle of meat can roll back and forth, will stay clean and be protected. This works great if you are a long way from camp and do not have an ATV or horse at your disposal. Heh. Everyone keeps asking about the knife. It looked that easy because the guy is skilled at doing it, not because he was using some top quality knife. He's using a $30 folding knife (Mercator), but he's using it with skill, and doing something he's done likely hundreds, if not thousands, of times.

and you can easily make a 12$ knife cut through anything on an animal if you know how to use a sharpening stone

Hi, Larry. This deer was only a young one. About 80lb at most. This particular species is Red Deer, and was shot in New Zealand. Cheers.

Great vid! The only thing I do different on the hind quarters is I don't do the muscle segments separate. I debone it all at once and then separate the segments later when I process the meat. Same end results though. Good eatin :-) great info for others. Hats off to you my friend.

Teresa , not many hunters take an air tank into forest, that would be practical if your butchering at home, but not when your in the field , and besides skinning with a knife is a lot more funner....

I deboned one of my sheep this way and it was easy, quick and worked fantastically. It is now my favorite method for processing my sheep.

Same, we (butcher shop) just cut down sides of backbone, then from leg down followed bones so ended up with 1 piece carcass, and 1 piece meat for further processing. Quick, easy, and clean.

Great s/s handy knives, but watch there are knock offs out there that are poor quality, ( had a near new one the blade bent back) try find an original German made one.

Awesome vid and not a bit to waste. Even the shanks which some might relegate to a burger or sausage pile. Modernly, in my country, Osso Bucco has been a new favorite use for venison shanks.

you typically gut it at the site to start cooling the animal. so likely wherever they shot the deer. other animals will come and clean it up.

I have been killing and cutting up deer elk and all manner of critters started around the age of 7 and I have never seen anyone as slick and quick as you Sir. Hats off to you I could use you on a Alaska Sheep hunt : )

nice job bud. I like how you started a cut on each muscle section on the hind quarters so you don't have to wrestle a solid chunk to get a good grab and clean cut. Def gonna do it like that next time (I've only done a single small doe myself so that's a nice tip for novice hackers) =) again awesome job dude.

amazed at how easy you made that look. im in michigan and i like to hang my deer for a couple day min provided weather is good for it. a trick i do skinning is hang deer. remove lower legs. cut down legs and start skinning. after a get a foot or so i take a socket and place under hide. wrap a slip knot around it and loop around hitch on truck and pull the hide off with the truck. comes off real easy and takes about 30 sec and no real effort. butchering is something i thought i was good at. you showed me i gave a lot to learn.

+John Bear I seen guys after skinning the legs, tie them to a car, put in drive and it comes off in one piece.
