Use two teaspoons of lemon juice and salted chickpea cans (you won't taste the salt after you add the sugar and bake). The lemon and the salt help stiffen up the peaks. Don't trust me, see for yourself, the difference is ASTOUNDING. Also, it helps to keep it 30min in the mixer and use beet sugar to keep it vegan (most cane sugars use bone char in the refinement process).
@havad39382 жыл бұрын
thanks. Have you tried beet sugar w/this? It calls for caster sugar, I'd think beet is too moist.
@chrisrosenkreuz232 жыл бұрын
@@havad3938 caster sugar is not a type of sugar, but rather a form of sugar. Sugar can be extracted from a myriad of sources and the form it will take is crystalized (that means there will not be any moisture in it, be it beet or otherwise). In layman's terms, if you put any old regular sugar in a blender you'll get caster sugar regardless of its provenience. The crystals will just become finer. Sometimes they put starch in caster sugar to keep it from clumping up. In Europe, the default source for what people think of as 'regular' white sugar is beets. In the US, it's cane. To answer your question, yes I have tried it with caster sugar and the only difference is that it takes less time to mix in because the crystals are finer, but if you're going for longer mixing times to get stiffer peaks, that won't matter anyway. If you do want to use it I recommend making your own by just taking your preferred sugar by source and running it through a blender/food processor until you get your desired size for the crystals. You can then mix that into whatever food you are preparing.

Do you ever have to add cream of tarter to the aqua faba to keep it from flattening out, or to you bake it quickly enough to avoid that problem?

Learn how to season and flavor like a chef. You are missing the point of cooking, unless you think of flavor and seasoning. Eat what you need, and flavor and season the rest.
@ianwynne54835 жыл бұрын
@@ShellyMcDonnell123 so what spices are you advising to get rid of the horrible after taste. I've never made this but would imagine a couple of teaspoons of lemon juice would dissipate that taste somewhat. Also can you explain what you mean by "Eat what you need and flavor the rest" , why wouldn't you flavour what you eat as well.

3 days for sure, but should keep for longer. I guess you're waiting to get 200 mL of aqua faba without having to make twice the amount of hummus? Just compare the smell of the old aqua faba to the "fresh" can and see if it's gone bad. Have a taste and see if it changed. If not - get banking =)
