Here’s the complete recipe for Easy Cheesy Enchiladas: ### Ingredients: #### For the Cashew Cream: - 100 grams of cashew nuts - Just boiled water (for soaking) - Juice of half a lime - 240 ml (1 cup) of non-dairy milk (e.g., oat milk) - 1/2 teaspoon of salt - A pinch of black pepper #### For the Filling: - 200 grams of vegetable stock - 200 grams of tomato puree (tomato concentrate) - 1/2 teaspoon of ground chili - 1 teaspoon of garlic powder - 1 teaspoon of ground cumin - 1/2 teaspoon of onion powder - 1/2 teaspoon of salt - Juice of half a lime - 1 tablespoon of maple syrup (or liquid sweetener of choice) - 1 can (400 grams) of black beans (drained and rinsed) - 200 grams of sweet corn (drained and rinsed) - 200 grams of roasted red peppers (chopped into thin strips) #### For Assembling: - Whole wheat tortillas (or corn tortillas for gluten-free) - Remaining tomato sauce - Fresh cilantro (coriander) for garnish - Sliced avocado for garnish ### Instructions: 1. **Make the Cashew Cream:** - Soak 100 grams of cashew nuts in just boiled water for 5 minutes. - After soaking, drain and rinse the cashews. - In a blender, combine the soaked cashews, juice of half a lime, 240 ml non-dairy milk, 1/2 teaspoon salt, and a pinch of black pepper. - Blend until smooth and creamy. 2. **Prepare the Filling:** - In a bowl, mix together 200 grams of vegetable stock and 200 grams of tomato puree. - Add the spices: 1/2 teaspoon ground chili, 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1/2 teaspoon onion powder, and 1/2 teaspoon salt. - Squeeze in the juice of half a lime and add 1 tablespoon of maple syrup. Mix well. - Pour half of the sauce into another bowl (this will be your filling sauce). - Add 1 can of black beans, 200 grams of sweet corn, and 200 grams of chopped roasted red peppers to the filling sauce. Mix well and adjust seasoning if needed. 3. **Assemble the Enchiladas:** - Preheat the oven to 250 degrees Celsius (482 degrees Fahrenheit). - Take a tortilla and fill it with the prepared filling. Roll it up and place it seam-side down in a small baking tray (can hold about six tortillas). - Spread half of the remaining tomato sauce on the bottom of the baking tray. - Place the rolled tortillas in the tray and cover them with the remaining tomato sauce. 4. **Bake:** - Bake in the preheated oven for 5 minutes to crisp up the tortillas. 5. **Serve:** - Once baked, remove from the oven and top with the cashew cream. - Garnish with fresh cilantro and sliced avocado. Yes it does! If you let a fermented drink brew long enough it will eventually use a up all the sugars you’ve introduced via whole fruit, juice, or granulated sugar, but can become quite sour at that point and takes a very long time, much more than a few days. I brewed kombucha for a few years and it was nice to find a balance between that pleasant sour bite with a little bit of sweetness left. However it is disingenuous to say a fermented drink has no sugars left i. The final product unless you have a device to test the levels, so folks with diabetes or other health sensitivities should be aware that this may not be suitable for them.

As the song goes, tamari tamari there's always tamari. Looks great, I think if I get tired of soup I'll use what's left as a pasta sauce. Just have to figure out what vegis to use, maybe roasted cauliflower. Thanks for the inspiration guys. Cook on!

If you don’t like coconut milk and prefer a lower fat alternative - cashew cream is what I usually use - I boil a quarter cup of cashews for 5 minutes in stock and keep about 50ml aside to blend them with - add some unsweetened soy milk afterwards if it’s still too thick.
