I will tell you why someone would go if their opponent jumped! When you are sitting on the line getting ready to race there are so many more things to pay attention too other than your opponent, And secondly some drivers get tunnel vision blocking everything else out except for the starter!

That Cadillac had less grip and spun over 200ft, still pulled after the mustang creeped up from a better launch. at the strip the Cadillac is calling it all day long. Plus you know for a fact that fox is pushing north of 600whp. A 408 carbed build like that always has a bare minimum of 600wheel.
