I saved Mammoth Sunflower seeds last year and planted them this spring. The plants are half the size. Are the seeds not true to the mother plant?

Love your gardens,.....question for you on verbena bonariensis (I hope I spelt that right) I have noticed yours are so much shorter than mine. Mine are towering over everything they are like 3-4 feet tall. They really stick out while they are lovely they throw off the balance they are so tall. Are there different heights in the same flower?
