They kept getting better with every roll but I was so happy when the last one was finally perfected 👏🏻 Using a sawing motion over a "push through" motion while slicing sushi rolls really is super important. Also dipping your knife in a bit of water to help the rice not stick between cuts is very helpful. Great job, Patty! 🍣

hey patty!! the type of seaweed that you used is roasted which is really flaky and breaks apart easily so it is not used to make sushi. you should get the non-roasted kind next time and it’ll hold way better :)

​@@sontypohnenamen5161the only way to roll in roasted seaweed without it crumbling is to wet it, which ends up making the texture like normal sushi seaweed. If it's crunchy, it's dry and brittle. Idk how you would make a roll like that

Pro tip. Sharp knife is an absolute must for the desired result. Also, one long slice towards you instead of a downward chop. And the nori is tearing cuz it got wet. Try to keep it as dry as possible despite everything else being wet. Its a challenge but like any skill you get better with practice.

To reduce breakage in sushi rolls don’t overfill. The temptation to add extra ingredients is high but if you have more stuff you can make more rolls. To prevent crushing the roll when slicing, slice with the tip of the knife and draw it back with one smooth motion. You can also try a bread knife as they are good for slicing soft things.

I love making sushi!! Couple helpful tips for next time: Your first one had far too much rice (as did my very first time making sushi). Less rice allows for a tighter and cleaner roll You want to have a SUPER sharp knife and have more of a sawing motion rather than pushing straight down Wiping the blade of the knife with a wet towel between cuts helps to get a clean cut every time Hope this helps someone out there!!

Looks good, I normally salt my fish for an hour to draw out moisture (to firm it up). Then freeze it for 24 hours to kill any bacteria. Also helps to put the ingredients about 1/3 way up from bottom to help roll it tighter. I see a lot of people also giving advice, I think you found a topic people are passionate about.

One of the things that makes good sushi rice is when you add the seasoning and mix it, you should fan it to cool it down quickly while mixing to let the seasoning coat each grain. It'll leave rice that doesn't stick together as much, so it doesn't feel like a brick when you eat it.

It happened to me like this at the beginning, what you have to do is that when you cook the rice, it doesn't have to be so wet, to manipulate it in the seaweed you have to wet your hands and it will be easier to manipulate when you put it in the seaweed, you also have to squeeze the roll very well when you are rolling it up. Best cooking video yet! If you put the top of your fingernails on top of the food (bend the knuckles in) it will decrease the chance of a terrible knife injury. Just put your second knuckle showing and you'll be a lot safer. Watching the channel for a while and love what you're doing!

try to cut the nori in half, put less rice and spread it out very gently without crushing the grains, if you see holes without rice it means you are on the right path, leave a finger of rice on top and fill it with rice at the bottom (this to make hossomaki), other tips are to use a japanese knife and sharpen it on a wet stone, make single cuts, and the most important thing is patience and dedication :D (but you already have that)

Hi Patty! This looks great and was so fun to watch you becoming presidentiable! 😄 I want sushi now 😋 A thing I remember from when I was cashier in a japanese restaurant is that the shushimen's knife was killing-level-sharp \o/ I would have to eat it as a burrito at home because all mine are poorly sharp 😂 You managed it very well!

Let the rice get close to room temp before rolling. It makes it easier to handle and prevents the nori from going soggy. Great vid!!

The trick is to leave the Saran wrap on, tie the ends then cut it with the wrap and then remove it afterwards. That's the way to make it really nice sushi.

Ive made sushi before! In my experience, sticky rice is very hard to find in india.. i can just order the nori online but the rice is too darn expensive so, what i did is i mixed some boiled potatoes with regular indian long grained basmati rice, to act as a binding agent and give it the sticky texture. Speaking of substituting, Is tofu a good substitute for tuna? (Im the only vegetarian in my family)

What you need to do to cut it nicely, is to use a serrated knife, you're using one with a straight edge and make sure you leave the plastic on when you slice it. I only know because I was a chef and I studied Japanese, so I know a lot about the culture, at least I think I do lol

These are some great attempts and the rolls look delicious. Couple tips to make things easier. Wrap the bamboo roller entirely so it doesn't come off after squeezing. Wet the knife before cutting, so the knife slides through easier and then wipe the knife after every cut.

couple tips press the rice in more to stop nori from tearing, wrap the entire makisu so you can reuse it over and over, and slice with knife instead of pressing

probably overstated in comments already but main issues is/was 1. use less rice, push to edges but dont compress 2. leave the last end of the roll with no rice, about 1/4 to 1/2 inch 3. dont squeeze, but shape the roll into a square as its rollled, pushing in the sides so it doesnt over flow. no excessive pressure, nori/seaweed broke because of it 4. wet the knife before cutting, and focus on the loonggg forward/back motion more (ideally once forward once back but not big deal), letting the knife's weight do the work of going down. 5. cut in half then slices, wetting and wiping the knife as much as needed, you can even do it with every cut. when plating, put the end butts at the back to hide it or just eat it >:) source: worked at sushi place saw a ton of improvement over a few rolls though, faster improvement than i had

Pro-tip: Putting rice vinegar into your rice cooker bowl will cause the non stick layer to peel off. Place rice in mixing bowl, then pour rice vinegar.

3 Things: Use a "very" sharp knife when cutting, keep the plastic on when cutting & use Non roasted seaweed. It looked great!

I use a handheld cheese slicer to julienne stuff like cucumbers, squash, zucchini, etc. you use the slicer to cut it into long flat slices, then a knife to cut it into the desired strip thickness.
