I love this recipe and have made it. I proof the dough in a bowl that fits my instant pot on yogurt setting, roll out on silicon baking mat and cook in Lodge 12” cast iron skillet. It comes out awesome and I had it for breakfast today. Thank you!

I bought your cookbook a few days ago and can't put it down! Three recipes in and today was the Pita Bread. It was the best I’ve ever had! Even after visiting various Mediterranean countries, this is THE BEST! I’m off to the market to buy more ingredients! I'm hooked! Thank you!

Suzy, what is your favorite brand of all-purpose flour to use? Also, I may have missed it, but are you using Active Dry Yeast? Thank you for this great tutorial! 🙂

I love home made pita. Occasionally I am in a hurry and I will pick up uncooked pizza dough from the market. Divide into 6 and roll and cook the same way. Not a bad substitute

Discovered you via your cookbook that I found and purchased in Target. Looking forward to making some of your delicious recipes! ☺️😁 I do have a request/question: do you have already or could you do a brief series on pairing dishes to make a satisfying meal? Do you serve 5-7 dishes most nights even while working full time? Or do you do 2-3? What do you tend to serve together to make a filling, satisfying dinner spread?

@TheMediterraneanDish7 ай бұрын
To make whole wheat pits, use 1 ½ cup whole wheat flour and 1 ½ cup all-purpose flour. If you want to make gluten free pita, you can simply replace the flour with the same amount of an all-purpose gluten free flour. Bob's Red Mill all-purpose gluten free flour or Bob's Red Mill 1 to 1 baking flour will work in this recipe.

1 cup lukewarm water 2 tsp active dry yeast ½ tsp sugar 3 cups all-purpose flour, divided (or 1 ½ cup all-purpose flour and 1 ½ cup whole wheat flour) 1 to 2 teaspoon kosher salt (I used Diamond Crystal kosher salt) 2 tbsp extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil),

Can you use whole wheat flour as a substitute?
@TheMediterraneanDish4 ай бұрын
Possibly, but it would be best to start with at least 1/2 all-purpose flour and 1/2 whole wheat flour... then adjust from there on future attempts. We have not had the best success ourselves using all whole wheat flour with this specific recipe as written. We feel like more tweaks are needed to make that work.

Great video. What is the temp when cooking the pita in the oven?
@TheMediterraneanDish7 ай бұрын
To bake pita in the oven: Heat the oven to 475 degrees F and place a heavy-duty baking pan or large cast iron skillet on the middle rack to heat. Working in batches, place the rolled-out pitas directly on the hot baking baking sheet (I was only able to fit 2 at a time). Bake for 2 minutes on one side, and then, using a pair of tongs, carefully turn pita over to bake for 1 minute on the other side. The pita will puff nicely and should be ready. Remove from the oven and cover the baked pitas with a clean towel while you work on the rest of the pitas.
