It's his on-stage persona. Some comedians have them and some don't. I don't think Dulce has an on-stage persona that she has to maintain. She's herself here. Phil Wang is almost like an exaggeration of himself. Very dry and self deprecating humour. Comedians like him or Richard Ayoade play this persona everywhere. Sometimes when they don't play the persona like on a podcast or a small interview, it's surprising to hear them laugh and be normal. I noticed he broke character some time during her set but quickly collected himself
