We have a small Big Green Egg. It's good for slow smoking things like pork, beef brisket, and many other things. Takes some getting used to it. I highly recommend a good remote bbq thermometer where can check heat while indoors. What I am not sure of is if one your size can hold the heat long enough. Ours barely does and is larger. Good luck! And yum! 🥩

Did you need to add more charcoal for the second batch of steaks? I am intrigued by the ceramic construction and wonder how that changes grilling. I am not a grill master and we went old school and bought a smoky Joe when the pit boss died. Now we need to build a grilling station to help block the wind. Just found your channel. It’s great. Very informative. I’m amazed how judgmental people are , sure if you’re cooking for public , but they need to go eat some dirt . Get some cross contamination from meat that fell on the floor . lol I’ve eaten raw meat and cooked meat and never got sick. Like you, I’m a boomer and grew up eating whatever including dirt. lol.
