Just discovered your channel and I wish you made more videos. My polish great grandmother (born and raised before comming to the us with my grandma) died when I was little and I don't know much about my polish herritage. Thank you for uploading!

Bigos has to be the most universal recipe of all time. Every recipe I see is totally different from the way my parents made it. And every recipe I see is totally different from the other recipes I see here on KZbin. Yet every recipe I see looks amazing LOL!! This one looks like a version I must try!!

As long as cabage, mushrooms and meat make the base, you can get creative from there on, its what makes stews great, you can try pretty much everything with them

Bigos was traditionally made with whatever food items were (are) available at the time. It depends on season of the year etc... There is NO "standard" Bigos recipe.

I'm not a chef, nor am I Polish. But, I do know that there are as many ways to cook this as there are people who cook it. So, all you people telling him that this is the wrong way to cook it need to just stop it!!

I discovered this recipe a few weeks ago when trying to find a new way to use sauerkraut. I cooked mine at low heat on the stovetop for about 3 hours (my oven is too small for my pot to fit in). I also used powidl instead of prunes for sweetness (my local international market had some). As you said, the house smelled fantastic while cooking! My family loved it, and we now have a new favorite winter meal. Thank you!

I'm so grateful I found your channel. I lived around Western NY for 9 years and fell in love with Polish food. My former supervisor introduced me to golumpki. I've tried dozens of pierogis, and the first time I tried Bigos was at a little restaurant called EuroDeli in Geneseo, NY. I live down south now and can't find these foods anywhere. Thank you for sharing your recipes, skills, and stories.

Sir-- first i heard your accent and got tears in my eyes. Then you said Hapanowicz and i started to cry. then you said New York Mills and i was ready to get my suitcase. to come home. I grew up in Utica. We got our kielbasa from Haps as mommy would call it and Pulaski's on I think Lenox st. Utica club beer was in the house. well, you get the drift. i love this recepie. keep up the good work !!

When I saw the ingredients included cabbage and prunes, I said to myself, this is Polish! I inherited my love of cooking from my Grandma Nuzback, who came to the United States all by herself as a young teenager around 19-Oh-something-or-another. Your channel brings back many fond memories for me.

I got a recipe for Bigos from a friend in Krakow. He asked his mother for it and she shared it. Ir is considered the national dish of Poland and no two recipes are alike. Authentic Polish Bigos will have the following. 1). Polish Kielbasa 2) Good Sauerkraut (not the canned stuff) 3). A head of cabbage 4). Mushrooms 5). Up to 4 different meats 6). 3 or 4 medium tomatoes 7). A medium to large onion 8). 2 or 3 different spices for flavor. (She called for caraway seed and tarragon. My store was out of caraway seed and I substituted rosemary and thyme. On reading a Polish recipe for Bigos once, I discovered THAT version used tarragon, Rosemary, and thyme as well) Other versions do different things, but his is consistent with other authentic Bigos recipes. I found it odd that he added apples carrots and prunes, but as I say, no two Bigos recipes are alike. I use garlic HEAVILY in my cooking. The recipe I used didn’t call for it, and trying it without the garlic? I discovered it was unnecessary.. You can use it, but if you use tarragon, Rosemary, and thyme, it isn’t necessary. Bon Apetite

Just discovered the channel and subbed. I grew up in Syracuse NY where my Polish immigrant grandparents fed me lots of kielbasa, but it wasn't until I was in my late teens that I discovered how tasty my grandfather's gołąbki were. He called them "pigeons" and as a small child that must have rubbed me the wrong way. Now that I'm middle aged and live among many Poles in Michigan I have discovered bigos and how amazing it tastes when mixed in with kielbasa. And my father would always get some kielbasa at the Hapanowicz Market whenever he was passing through the Utica area!

Thank you for the recipe! One day my Polish coworker suggested me to try a dish named Bigos, and thank you for your recipe, now my whole family is in love with Bigos! I am not sure how authentic my Bigo is, since I am replacing some polish ingredients with argentinian, but it doesn't matter, we absolutely love your it! Hugs from Argrntina!❤️

I just wanted to point out that the folks acting elitist about what goes in Bigos are completely missing the point of hunters stew, much less regional food. Hunters stew is a recipe of availability, otherwise it would just be stew. To make it "authentic" it needs to be based on ingredients available to the folks from whom you inherit the recipe but to say that adding this or that vegetable or forgetting this or that herb/spice makes it not *real* is ignoring the fact that a stew like this only even starts to have a "recipe" once you've widespread agriculture and people aren't foraging anymore. Otherwise you can't count on 3 types of meat, 4 vegetables and a wad of fruit every time you go to make it

Yes! It's called hunters stew because they used what they had. That's the way my mother taught me to cook. If you don't have what you need then use what you've got. And I was born and raised in the hills of West Virginia!

For everyone complaining about his bigos recipe. Every town in Poland has its own bigos recipe just about. My families bigos has only cabbage, sauerkraut, pork, beef, kielbasa, carrots, and celery. The seasoning are different and then when your done you have to let it rest for two days. Splash in a little white wine, reheat and serve. But I'm not gonna throw a fit over it. I'd eat this and enjoy it probably as much as babcias

My German auntie (b1918) made a wicked Bigos similar to yours. But it never rested for two days cuz we ate it right up! She also made an awesome beet stew she called Borscht, but it wasn't anything like Borscht as the Russians make. So yeah, everybody has a different version of things depending where & when they came from.

@@dumblady my babcia was from Western Poland, and with how much that border moved back and forth over the years it very well could be the same recipe. My babcias borscht also was not like the more eastern style. It was more of a beet broth that you put your boiled pierogi into like dumplings.

Some advice from Poland: bigos is rather cooked on fire , not put in the oven - the longer the better. At night can be cooled or frozen outside. Then warmed up, and so repeated for several days - delicious!

In the past I used a recipe that did not include fruit or tomatoes. I tried this and was very pleased with how it tastes. My grandson just asked for a Polish food for his birthday dinner. This is on the menu.

Dzien dobry Dariusz ! Witam ! Did you have to add any broth or water at any point in the cooking process ? And as I was reading through some of the comments, I think you said you are from the southeast region of Poland ? My parents are from the southeast. My mother is from Dobrynia, somewhat near Jasło, and my father is from Trzciana, which is near Dukla, Tylawa, Barwinek. This recipe looks fantastic and I will make it very soon. All those who say you are making it wrong/non-traditional really have no idea what they are talking about. Recipes vary all over Poland. Your recipe is a little bit different from my mother’s recipe and that’s fine with me. You make the cooking seem very simple and very straight forward.

I think you could use any meat you like. If you think of 17th century, much of cooking was about food preservation and using what was available. You just harvested your cabbage in September and needed to use up most of the sauerkraut in your barrel to start a new batch and the next door neighbor had just sluaghteres a cow. So you use parts of your freshly slauthered pig, some of the cow, the old sauerkraut with lots of acid which will help prevent spoilage and also the fresh stuff, throw in some dried plums and dried grapes to counteract the acid and also some of the old wine from sevearal days ago that doesn't taste so good anymore. Add some of that smoked kielbasa that is nearing its expiratiuon and then maybe some venison too or even some wild boar if hunters were passing through. Everyone contributes and everyone gets some - it was about survival and if it tasted good that was sometimes an extra benefit. That's how recipies were and are born... 😁❤🐾

I made this during the week, only thing I couldn't get was the Polish mushrooms. I did it in the slow cooker for 6 hours. It was delicious.

I love Bigos and yours look delicious! The only difference between mine and yours... I use Button Mushrooms 🍄 I can’t find traditional Dried Polish Mushrooms. (I’m sure I could find them online but, every time I’ve attempted to buy any sort speciality foods online, it turned out to be a disaster and a waste of money!) I also use a cast-iron Dutch oven. Here in Wisconsin we grow lots and lots of cabbage, and produce an abundant supply of sauerkraut. Interestingly enough, though, sauerkraut that comes all the way from Poland comes in a larger jar, is cheaper and tastes better than ours.

Been doing it for centuries so they perfected the techniques, and Polish economy is pretty fucked, they have their own coin (zloti) which is worth about 4 times less than the euro, so they most probably dont charge expensive prices for their exports

Another flavor idea that many forget about: lard. Lard is a fat that is less saturated than butter I was told. They stopped selling it because it competed with seed oils, corn and canola oil. Those are BAD, they cause inflammation and the inflammation clogs arteries. Lard is perfect for browning meat where butter flavor might interfere. What's great about lard is that it lasts a long time. I use a ceramic round butter holder for room temperature right on the top of my stove. It's perfect for browning all kinds of meat and I use it all the time. The problem is that you have to look for it, as many stores do not carry it. Lard is not Crisco, but natural pork fat.

He's good!! Bardzo dobrze, w moich stronach nie dawaliśmy pieczarek , ale ja gotuję wszystko w instant pot, i browning everything in the wok 👍so technically 3 steps cooking and no mess to cleaning 👍 and of course good beer inside and outside 😂😆👏

In my family we add also smoked prunes , red wine, kielbasa, sweet bay and caraway, we add less tomato paste (1spoon). Good bigos should be very sour and "smoky".

wouldnt that be up to personal taste, and wouldnt that smokey flavour come from the fire since it is a hunters stew?

Smoky flavour comes from "kiełbasa swojska" -kind of very smoked, dry sausage (it's best sausage you can get in whole Poland - but now I'm vegetarian so… I do not add it to bigos) and from smoked prunes. Yes it's up to the taste of family, my family likes it sour (we come from southern Poland) Once I ate Bigos in a restaurant in Warsaw and it was bland and tasteless.
