Some of the levels took me by surprise and at the end of some I found myself saying, "wow, that was a really cool level."

From a layman's perspective, this seems simple enough. Just place all the lines in a common folder, then make the computer play a random sound file from the pool. Add to that an accelerometer/gyro to measure attitude and pressure sensors on legs to measure when it's being picked up/when its attitude is more than X degrees and create separate folders for different sound pools.
