The smell is stronger the closer Subaru is to a restart point. Because the restart happens in the Sanctuary, when Subaru leaves, the scent is still very strong. That is why Garfield didn't care as much in the first encounter, since it had been a longer time since the last restart. Rem says as much in episode 15 of the first season.

Keep it up, stay strong! :D A lot is happening and we are constantly being bombarded with new information, but I promise if you pay attention everything ties together and makes sense eventually. Not that it matters now, but when Subaru said he was going to resume what he was trying to do before he was interrupted and captured 3 days before, he was referring to his meeting with Roswaal--not attempting the trial. That doesn't appear to be something he wants or is able to do without getting people on board with it first. Re:Zero is known for being cyclical, but especially so here in this loop where we follow a pattern of talking to Subaru's peers, comforting and encouraging Emilia, consulting Roswaal for new information, heading back to the mansion, being set back in some way and meeting with Echidna for even more information. With the setting constantly changing it's hard to get the bearings too. When he was teleported unconscious and awoke in a snowy sanctuary I think everyone had the same fear watching for the first time. That he somehow passed out long enough for everyone to leave and all that tragedy to become saved over and permanent. I'm just gunna say I don't think the "tact" matters a lot here in the way you think it does for Subaru. Like, if he somehow managed to ask if he could do the trial in a different way or tried to be friendlier with Garfiel to get on his good side. Regulating his anger and brushing up his negotiating skills certainly was a "life-saver" for the second half of season one. Though, it wouldn't matter here because Subaru is subject to forces outside his control and his knowledge. He doesn't even know what he doesn't know that would otherwise help him start to move things in the direction he wants. Garfiel becomes progressively more suspicious and hostile to Subaru because the "Witch's Scent" becomes permanently more powerful and more pungent on Subaru everytime he dies and everytime he tries to tell someone about it (minus Echidna as you've seen). Rem has also noticed it has been getting stronger and Betelgeuse once stated Subaru has enough miasma equivalent to that of a Sin Archbishop. Also, I don't think referencing things that have happened in another loop off-hand as a joke or to brush them off matter a whole lot in the way of his success either. That's kind of just what Subaru does, remember? Speak his mind out loud, in these cases I imagine relating to the experiences he shares with no one and speaking them into existence in hopes they live on in his heart and actually matter. The worst that seems to happen from that is people seem confused for second but then move on. Referencing throwing Ram as a distraction to save Rem during the mabeast assault seemed to have triggered discrepancies in Ram's memory too. The archetype of a witch is a chaotic, unstable person who lives alone within nature in places like swamps. They often own cauldrons and "brew potions" that have magical effects. Hearing Echidna say she puts things from her body into recipes she makes people ingest makes me think of the Yandere stereotype. The creepy, loner girl who's obsession with the object of her affection causes her to do crazy things. Like Meg from Family Guy baking her hair into a pie she fed to Brian when she had a crush. Or Anna Nishikinomiya from Shimoneta "brewing" her "body fluid" 🥵into cookie batter. When I heard Echidna say she uses her body fluid, I'll admit I thought it could be "that". I don't know if the show will say specifically what it is, but actually if you pay attention to her behavior you can infer. They've given you a big hint already ;)

Don't worry all will come together. We're just simply being introduced all the pieces to the puzzle first. Subaru needs to gather allies and defeat multiple antagonists at the same time. The assasins at the mansion, these rabbits and getting Garfiel on our side... all while exploring the lore of the world and the different sides of these characters depending on the cause and effect of what Subaru does differently. We still have Rem to take care of, with the archbishops of Greed and Gluttony

After Garf transforms he essentially not himself anymore. He's just a beast. I'm guessing it's not portrayed anywhere or said explicitly (Or I just don't remember it happening). He's just like "Okay I'll transform and all the problems will be solved by making a bloody mush out of all trouble makers". Not the brightest strategy (kinda cowardly even), but no one in the Shrine have capability to stop Garf in the beast mode as we saw in this episode.

You have to remember that in this reality there is no Rem so in the eyes of the villagers Subaru went alone into the forest and returned their children. And he has no powers, he's a simple man, so for them he does look like a total hero. Of course they would try to help him any way they can.

The most important thing that the anime fails to demonstrate here and even contradicts a little later (they kind of mess this up and it was clear in the novel) garfiel completely loses control when he transforms. He’s too nice to kill people in his human form, so when he has to fight, or when he loses his cool, he transforms to avoid the guilt of attacking people.

This is one of the greatest story telling. But it really needs focus from the viewer and on your first time watching there is no way you catch everything. So rewatching this is recommended on your own time if you want to be on point with all the mystery stuff that isn't explained. This show has a lot of get 1 answer, but 2 more questions get added.

The necklace teleported him to the trial when he was tossed past the barrier, the same way at the start of the season. Since he took too long, the snow was called and the rabbits showed up while everyone was getting bodied by garfiel. Im not even sure if Subaru was teleported like that at all in the novel either time, but its been a while.

Sam is essentially verbalizing that what Subaru is feeling is understandable and he needs to process it slowly rather than just shutting up and giving all his attention to whatever Echidna wanted to say at that moment.
