Sublimation ..used by freezers to avoid ice formation....But how is ice formation avoided?

Iodine is a chemical element with the symbol I and atomic number 53. The heaviest of the stable halogens, it exists as a lustrous, purple-black non-metallic solid at standard conditions that melts to form a deep violet liquid at 114 degrees Celsius, and boils to a violet gas at 184 degrees Celsius. According to wikipedia the Iodine should have melted to form a liquid before turning into a vapour. The only time iodine can be in liquid form at room temp is when it's mixed with water so it doesn't really sublime. Btw, I cannot see how a vapour is considered to be a gas phase. in my opinion a vapour is on its way to becoming a gas through the process of evaporation. The iodine doesn't turn into a true gas by evaporation.

So ice/snow fog when the air temperature is -10⁰ c is a result of the sublimation process. And then the resulting ground flurry is the deposition phase.

So is the iodine not turning into a liquid for extremely small amount of time before turning to a gas? That just doesnt really make sense.
