Both in Italian and Latin (classical pronunciation 2k years ago and ecclesiastical Latin), the QU in Quintus is pronounced the same way you would in english; Kween-toos). If it was spelled the same but pronounced in spanish then it would be "keen-toos" like you pronounced it in the video.

I'm still listening to the video so I heard this later, but the position/word QUAESTOR follows the same QU pronunciation. The AE is pronounced like english EYE. That same rule is followed always when pronouncing latin words. QUAESTOR is pronounced KWY-STORE.
