I like my veggies showing up in my curry, but I am intrigued with your version. Must put that on my 'to try ' list. Now to try a workaround for the deep-fried chicken. I have done Tonkatsu shallow fried with decent results. The cumin would give it a different taste.

TO AARON & CLAIRE: I am new to your channel, but very much enjoyed the three videos I have watched from you so far. I will LIKE, Subscribe, and turn Bell ON for notifications too. I will watch more, as I like your content, your excellent presentation and demonstration skills. You make it look easy enough to try the techniques, with foods on hand, and “don’t worry about it” is a great catch-phrase for you (each time I hear it I think it is smart you say it to reduce the fear some cooks will have about not having all ingredients shown). . But I also greatly appreciate your tips, and your observations about what makes some ingredients or techniques special or critical or important for the final result. You really have a talent for this kind of cooking demonstration and teaching. Well done! Also, I enjoy the expressiveness of Claire, and how she comments on the flavors, textures, and compares it to other dishes she has had. She’s cute (adorable personality or character), and adds to your videos with some humor and balance and enthusiasm which makes the entire video come together with a nice finish. Also, on this video I chuckled (and appreciate) that she is shown doing the dishes (as her contribution to the effort in cooking a meal), and think that final wave was nice to the audience. It may seem odd to commend a final clip that shows dishwashing, but I saw it as another example of how you are working together as a team, as a couple, and both doing something. That’s nice and gives a great impression about both of you. Keep up the good work!

I love those Japanese curry mix blocks! I jumped up and down with excitement when I found them in the grocery store here (there are NO Asian grocery stores within 3 hours of my new place. This makes my life really difficult.) So I stock up and keep those mix boxes stockpiled in my pantry at all times. (It helps that I love Japanese curry and make it often.)

I know, right? I have found it in a local store, and also I just found an Asian grocery store in a large mall in the nearby city that I can get to on the bus. Plus a few weeks ago, I finally found Chinatown which had three good sized stores. I'm so excited LOL The only downside to me is that there is so much sodium in the packets. Time to Google Japanese curry mix.

TO ARRON: I am new to your channel, but I already like it very much, because of how you teach and demonstrate things. I have never heard of Hondashi. I would appreciate a video that you make that identifies ingredients you use, what they add to a sauce or meal (flavor, salty?, sweet?), and how Mirin or other ingredients can change a dish. While this may be a matter of taste, I think it would be helpful to non-Asian cooks (like me) who are trying to learn Asian cooking, and are not yet familiar with all the many sauces and ingredients and how they may change the dish. For example, why use Dark Soy Sauce instead of regular Soy Sauce, and how does it change the flavor? When I go to a typical Asian grocery, I am overwhelmed by the huge number of sauces and ingredients which are unfamiliar to me (American cook), and not aware of how one may be better or needed. So, this is just a suggestion or request for a “Basics” video where you can give us some guidance on not only what to buy, but why, and how it is different from other products we may think we know. (Another example is the mayo, and why the Japanese mayo may be preferred over “American mayo”). I am writing from an American perspective, so this may not be such an issue for your entire audience, who may already know these things (products, flavors, why this over that).

Hon Dashi is essentially Dashi in powder form like stock cubes basically, there are many ways to make Dashi on your own without the powder, these take time. If you look up Dashi recipes you should find what you need :). The good thing about making your own Dashi is that you can also reuse the ingredients to make a lighter broth after the first one, and even use the Kombu for rice seasoning so very little goes to waste. Usually though it involves soaking Kombu (Sea Kelp) in water for 4-24 hours, cooking it to just about boiling and remove the Kombu (NEVER boil Kombu as it will go bitter) remove from the heat then adding bonito flakes (katsuobushi) to the broth. Leave until the flakes have sunk to the bottom then strain through a Muselin/Cheese cloth to remove all the flakes. Obviously I'm being really simply here but that's about the basic for a traditional Dashi. There are lots and lots of variations, for vegans and vegetarians you can use Shiitake Mushroom water (soak themushrooms in water for a few hours and add this to the Kombu water). Chefs will also make their own variations, some will use types of tea to add more flavour and depth to their Dashi. Etc etc.

But after writing a few questions, I did a quick search on KZbin and see there are several videos about the flakes. I will watch them later, to learn more. But thank you for answering my earlier question. I learned several things, and one of them is that KZbin has a video on everything (I didn't earlier search for bonito flake video). :)
