Def recommend coconut oil over olive for the chocolate! At a bakery I used to work at we used vegetable oil to make the chocolate more runny. Like A LOT of vegetable oil. Coconut will make it taste delicious with coconut flavor and do the same thing

Not everyone likes coconut or wants all their chocolate desserts to taste like coconut. Oil is more versatile and you can use cocoa butter, too.

To go well with peanut butter I'd suggest apples, or like someone else suggested: Bananas. I'd also be interested to see how well pineapples, oranges, or even blueberries might go with that format (maybe swap out the peanut butter for another binder, like a marshmallow or chocolate spread? Maybe add something like crushed graham crackers as a topping?)

These look amazing! The only suggestion I can make is add a bit of solid chocolate to the melted chocolate and stir until smooth. This helps bring the chocolate to temperature and it has more of a 'snap' and bite instead of it still being soft out the freezer.
