I know comparing these kind of tacos to the jack in the box tacos is sacrilege but as someone who grew up eating them as a teen I can’t help but feel like this is the “adult” version. So much better in every way of course. Love your channel.

I love the music in these videos. On my own, I came up with the technique of making crispy tacos by spreading a thin layer of butter on them and crisping them in the cast iron skillet, which is WAY better than a commercial fried taco shell. Done this way, the (corn) tortillas get so crispy and the char from the blackened spots is SO delicious. I've never seen such a technique used before, but I doubted I was the first person to come up with it. So here is a similar technique. The meat technique used here is a typical authentic Mexican beef for tacos, but it's not well known to gringos.

Amazing looking tacos! That sauce on the tortilla then grilled has to really set these apart from regular tacos. I can vouch for your Spanish rice recipe! We have made it here at home numerous times and it's everything you expect in a great Spanish rice. Thank you!

I made it yesterday and the vinegar was overpowering, so I thinned it with water and a beef bullion cube . It tasted a lot better the next day, but I still tasted the vinegar. Next time I will skip the vinegar.

Yummy!! If your instapot ever breaks, look into a ninja foodi. Pressure cooker and roaster, etc. I don't have to transfer to an oven to brown. I just drop the browning lid. Love your joke!

I can get a hold of dried ground ancho and guajillo pepers but not the whole ones. How can I adapt the recipe to the powder pepper?

That might take some experimenting. It is not easy because of the variables like dried chiles vary in size and heat. If I were to try it, I might try 1/2 tsp to 1 tsp. per chili. Hope that helps some.

Hi Sharon, I really think it’s the beef that makes this sauce taste so good. Using fish would certainly make a different sauce. I would make this with beef and then grill some shrimp and use the sauce.
