Crunchy Tortilla Taco Ring
1 tbsp olive oil
1 large white onion
1 red bell pepper
1 jalapeño
1 pound of ground beef
1 packet of taco seasoning
10 flour tortillas
nonstick cooking oil spray
1½ cups shredded cheddar cheese
2 cups tortilla chips
1½ cups shredded monterey jack cheese
Directions:
1. Cut tortillas into strips, and layer into a bundt pan
2. Cook onions, red bell pepper, jalapeño and ground beef, in a separate pan
3. Add cheddar cheese, ground beef, Monterey Jack cheese, tortilla ends, and tortilla chips, in layers until cake pan is full.
4. Bake for 45 mins at 350°
5. Top with more cheese and parsley (optional)
6. Dip: (Optional) Salsa, Cheddar cheese, Jalapenos, Lime Juice, Drizzle with cilantro crema

Because corn tortillas in the United States get stale fast. The ones made in Mexico stay soft because down there they only use the corn to make the masa for tortillas in the United States the whole corn with the cob is used to make corn tortillas so they go stale when they cool off.
