Sadly they don't show the first step where mostly women and children peel the "nuts" from the fruit. That's where a lot of them get their fingers blackened by the caustic juice i side the fruit. Eventually it leads to loss of fingers.

Usually the raw zones (before roasting and cracking) doesn't need any temperature control and humidity control. The controlled zone (high care) area where the sorting is happening will have the AHU (Air handling units) with F5 or F7 filtration and less than 65% humidity is maintained. Once finished product is vacuum sealed, then they can be stored at ambient conditions without any storage temp / humidity controls. I work as a Food Quality Auditor, most of our nut suppliers are like this. Usually seasoned nuts need temp and humidity controls. Normal nuts may not require it if nitrogen sealed.

What happened to the fruits where the nuts was removed? Are they being fed to pigs? Or also eaten by humans? You did not show how the shell was removed and separated.Are those cashew nuts rejected as broken in small pieces turned into cashew butter?

In some places people will extract the juice from fruits and convert as wine. not all pieces grades will be used in manufacturing of cashew butter. some grades will be used in sweets, ice creams also

@theengine1202 Since cashew requires a frost-free tropical climate, planting in the United States is limited to extreme south Florida, Hawaii, and Puerto Rico. There is no commercial production in the United States, though cashews are grown in botanical collections and some home landscapes. Hope you understand. Climate plays major role in agriculture 😅
