Fajitas were invented by Mexican meat market man Sonny Falcon, originally from The Valley, in East Austin in 1968. The marinated shirt steak sizzling fajitas were served in a couple of restaurants in Austin by the late Fall of 1972. Ninfa’s started selling them in Houston circa 1978. The origin story of fajitas are well-known. La Margarita may have been the first restaurant in San Antonio to put fajitas on their menu.

Actually, fajitas were discarded at meat purveying companies across America. The men of Mexican heritage whom worked at many of these places in Texas would confiscate the fajitas before they made it to the trash. There my friend, was where fajitas got their start...way before Sonny Falcon.

Outside fajitas dont have to be marinated They are tender as is just salt and pepper Inside fajitas are tough and may require marinating

Californian: had Tex Mex in El Paso - thought it was a joke, refused to eat any of that stuff for the rest of my time in Texas.

The food and restaurant is too commercial. From what it was in 1941. The pre- shucked oysters prove one point.And are extremely small. You want a oyster bar, you shuck them right then. The fajitas are marinated for 2 to 3 days? Not even close, the chicken would be a way darker color if marinated that long. Besides, you can't marinate chicken for 3 days. It will spoil. The skirt steak was pre-bought and your typical run of the mill marinated skirt steak. Nothing special, I could make more Authentic fajitas in my kitchen. Score - 3 out of 10.
