Darren: Every whisk(e)y I've ever tasted is apparently meant to taste like vanilla. Me: Well, yeah ... that's what burning the oak barrels into charcoal inside does for them. The char liberates a whole handful of flavouring chemicals (vanilla, spice, coconut, toffee, caramel, wood) which the spirit can then leach out of the wood and into itself. For decades, Scotch distillers have put their whiskies into American charred oak barrels that once held bourbon or other spirits, and allowed the remaining flavours (and the flavour of the American whiskey, too) to percolate across the barrier and out into the drink. (American bourbons and whiskeys must be aged in new charred oak barrels which have never been used; knocking them down to staves after and shipping them to Scotland prevents waste and provides revenue for the distillery to make more barrels to make more whiskey ... and so on.

Smell it again. Then take a very small sip. Your first sip will differ from the second and third sip, etc.. It gets smoother. And the "neck" part of the whiskey will also differ in taste/smoothness from the base part of the whiskey. Take VERY SMALL sips. That's my number one tip. Enjoy. I do!
